- 1Â 1/2 c. minced fresh tomatoes
- 1/2 c. minced white onion
- 1 x serrano chili, stemmed, seeded and chopped
- 1 x clove garlic, chopped
- 1/4 c. salt-free chili pwdr (see recipe), divided use
- 1 Tbsp. vegetable oil
- 1 x (about 2 1/2 pounds) chicken, skinned and cut into pcs
- 1 x lime, cut into wedges, for garnish
- Â Â Preheat oven to 375 degrees.

- Combine tomatoes, onion, chili, garlic and 1 1/2 tsp. salt free chili pwdr in small bowl. Stir to incorporate ingredients and reserve.
- Using a brush, oil bottom and sides of a medium-sized baking dish. Arrange chicken pcs in the dish. Sprinkle with half the remaining chili pwdr. Bake, uncovered, for 30 min. Turn pcs and baste with pan drippings. Sprinkle on remaining seasoning mix. Bake an additional 20 min, basting again after 10 min. Serve chicken with salsa. Garnish with lime wedges.
