Pochero

This is a Filipino version of the Spanish Cocido. It's a little sweet, which makes it even tastier. Beef is usually used, but I sometimes substitute it with pork. Some pochero recipes include chorizos, but I personally don't like eating chorizo so I did not include it in my ingredients. I hope you like my version!

Ингредиенты

  • 1 Kilo of Pork, cut in cubes (1 1/2 - 2 inches)
  • 1 onion, sliced in wedges
  • 4-5 cloves of garlic
  • 1 1/2 cups of sliced Plantain Bananas (Saba)
  • 1 1/2 cups of Sweet Potato, cubed
  • 3/4 cup of string beans
  • 1 cup of cabbage or Filipino bokchoy (baguio pechay)
  • salt and peppercorns to taste
  • 1 can of pork & beans
  • cooking oil
  • 1/4 cup patis, fish sauce
  • 1/2 cup tomato sauce
  • 3 cups of water

  1. In a pan, add oil then fry bananas and sweet potato until slightly brown. Set aside.
  2. Saute garlic and onion, then add in pork and stir cook until color changes to golden brown.
  3. Add in fish sauce (patis) and tomato sauce. Then add water and peppercorns. Cover and bring to a boil.
  4. Then add sweet potato, cover pot and let it boil for another 5 minutes.
  5. Add fried bananas, string beans, and can of pork & beans. Let it simmer for another 5-10minutes.
  6. Put in cabbage or bokchoy, cover the pot then turn off the stove. Serve hot.
