Ингредиенты

  • 85 gm Fresh Strawberries
  • 85 gm Fresh Raspberries, (if in season)
  • 2 x Passion Fruits
  • 2 slc Fresh Pineapple
  • 2 sprg Fresh Redcurrants
  • 4 x Egg Yolks
  • 55 gm Caster Sugar
  • 200 ml Hot Sparkling Wine
  • 1 sprg Fresh Mint, (minced)
  • 65 gm Butter, (softened)
  • 125 gm Caster Sugar
  • 60 gm Flour
  • 60 gm Golden brown Syrup
  • 1 pch Ginger Pwdr

  1. Prepare brandy snap mix by mixing ingredients together in a bowl.
  2. Mould into a dough and roll little balls of the mix in your hands.
  3. Place the 'balls' approximately 3 inches apart on a greased and floured baking tray and bake till golden, approximately 8 to 10 min.
  4. Remove from the oven and allow to cold for approximately 2 min.
  5. Remove the circles of mix with a palette knife and mould over the top of a greased dariole mould (or possibly orange) to formulate the basket.
  6. To make Sabayon whisk Large eggs and sugar over a bain marie till they double in size. Add in the warmed sparkling wine and the mint.
  7. Arrange fruits neatly around a dessert plate, place the brandy snap baskets in the centre and fill with an ice cream or possibly your choice.
  8. Coat the fruit with the sabayon mix and glaze with a blow torch or possibly under the grill. Serve immediately.
