Here is a classic Retro Dessert. When's the last time you had a slice of Pineapple Upside Cake? Does this bring back childhood memories?
It seems that this cake was invented somewhere between the late 1920's or early 1930's. One of Jame Dole's (of Dole Pineapples) engineers invented a machine that would core and slice pineapples. Soon, canned pineapple became a pantry staple in American homes-- and thus, the Pineapple Upside Down Cake was created. That's what I read on the internet, so it must be true!

%20engineers%20invented%20a%20machine%20that%20would%20core%20and%20slice%20pineapples.%20Soon,%20canned%20pineapple%20became%20a%20pantry%20staple%20in%20American%20homes--%20and%20thus,%20the%20Pineapple%20Upside%20Down%20Cake%20was%20created.%20%20That's%20what%20I%20read%20on%20the%20internet,%20so%20it%20must%20be%20true!%3C/p%3E%3Cp%3EI%20love%20fresh%20pineapple,%20and%20one%20of%20my%20favorite%20snacks%20is%20pineapple%20and%20cottage%20cheese.%20%20I%20could%20eat%20that%20every%20day,%20and%20be%20content.%20%20On%20our%20recent%20trip%20to%20Hawaii,%20I%20was%20always%20happy%20to%20see%20pineapple%20as%20a%20garnish%20with%20my%20breakfast%20(and,%20with%20a%20few%20of%20the%20Mai%20Tai%20cocktails%20that%20I%20enjoyed).%3C/p%3E%3Cp%3EThis%20weekend,%20we%20had%20our%20friends%20over%20for%20a%20very%20casual%20dinner.%20%20I%20wanted%20to%20cook%20whatever%20I%20found%20in%20our%20freezer%20and%20pantry.%20%20I%20thawed%20some%20pork%20ribs,%20so%20%20%20Craig%20grilled%20his%20perfect%20ribs.%20%20I%20doctored%20up%20leftover%20barbecue%20sauce%20with%20homemade%20pineapple%20jam,%20honey%20and%20teriyaki%20sauce.%20%20While%20I%20was%20at%20it,%20I%20made%20a%3C/p%3E%3Cp%3Equick%20slaw%20using%20a%20can%20of%20crushed%20pineapples%20and%20lite%20coconut%20milk%20that%20I%3C/p%3E%3Cp%3Efound%20in%20the%20pantry.%3C/p%3E%3Cp%3ELo%20and%20behold,%20I%20found%20a%20can%20of%20pineapple%20rings.%20%20I%20don't%20remember%20when%20or%20why%20I%20bought%20them,%20but%20I%20decided%20to%20keep%20the%20pineapple%20them%20going).%20%20I%20hadn't%20made%20a%20pineapple%20upside%20cake%20in%20at%20least%2025%20years,%20and%20guests%20were%20arriving%20within%20the%20hour.%20%20So,%20I%20pre-measured%20all%20of%20my%20dry%20ingredients%20and%20set%20up%20the%20rest%20of%20my%20ingredients.%20%20Once%20we%20finished%20eating%20ribs,%20I%20made%20the%20cake.%3C/p%3E%3Cp%3EI%20wanted%20to%20use%20a%20cast-iron%20skillet,%20because%20I've%20seen%20this%20cake%20made%20that%20way.%20%20All%20I%20had%20to%20do%20was%20separate%20three%20eggs.%20The%20egg%20whites%20were%20whipped%20till%20fluffy,%20then%20set%20into%20a%20separate%20bowl.%3C/p%3E%3Cp%3EDon't%20faint,%20because%20that%20is%20one%20stick%20of%20butter%20you%20see%20melting.%20%20Next%20came%20one%20cup%20of%20brown%20sugar%20and%20some%20dark%20rum%20(you%20can%20use%20pineapple%20juice%20instead%20of%20rum).%20%20Whisk%20it%20all%20together%20and%20now%20for%20the%20cake%20batter.%3C/p%3E%3Cp%3EIn%20a%20cake%20mixer,%20beat%20the%20egg%20yolks%20and%20sugar%20until%20fluffy.%20%20I%20added%20a%20combination%20of%20rum%20and%20pineapple%20juice,%20because%20I%20didn't%20want%20to%20overdo%20the%20rum%20flavor.%20%20Next,%20comes%20flour,%20baking%20powder%20and%20salt.%20%20Last,%20the%20egg%20whites%20are%20gently%20folded%20into%20the%20batter.%20Done!%3C/p%3E%3Cp%3EMaraschino%20cherries%20are%20tradition,%20and%20I%20think%20they%20add%20a%20nice%20pop%20of%20color.%20%20You%20can%20replace%20those%20with%20pecans,%20if%20you%20prefer.%3C/p%3E%3Cp%3ESpread%20the%20batter%20evenly.%20An%20off-set%20spatula%20makes%20this%20easy%20to%20do.%3C/p%3E%3Cp%3EBake%20at%20350F%20for%2025-40%20minutes.%20%20Times%20can%20vary,%20if%20you%20use%20a%209-inch%20cake%20pan,%20vs.%20a%20cast%20iron%20skillet.%20I%20checked%20my%20cake%20at%2030%20minutes%20and%20the%20toothpick%20came%20out%20clean.%20%20Let%20the%20cake%20cook%20for%20about%20ten%20minutes.%3C/p%3E%3Cp%3ESet%20a%20plate%20on%20top%20of%20the%20skillet/cake%20pan%20and%20carefully%20but%20quickly%20flip%20it%20over.%20%20We%20did%20this%20over%20the%20kitchen%20sink--%20just%20in%20case%20of%20an%20accident.%20%20Some%20of%20the%20juice%20flowed%20over%20the%20edges,%20so%20be%20forewarned!%3C/p%3E%3Cp%3EWe%20all%20exhaled,%20that%20the%20cake%20successfully%20came%20out%20of%20the%20skillet--%20and%20here%20it%20is.%20I%20think%20it's%20a%20beautiful%20cake,%20if%20I%20do%20say%20so%20myself!%3C/p%3E%3Cp%3EI%20think%20Pineapple%20Upside%20Down%20cake%20is%20best%20served%20slightly%20warm.%3C/p%3E%3Cp%3EIt's%20even%20better%20with%20a%20dollop%20of%20fresh%20whipped%20cream.%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20%20I'd%20love%20to%20see%20this%20cake%20make%20a%20modern%20come%20back.%20%20Nowadays,%20a%20pineapple%20corer-slicer%20makes%20serving%20fresh%20pineapple%20a%20really%20simple%20job.%20%20I%20wondered%20if%20this%20cake%20wouldn't%20be%20as%20good,%20using%20canned%20pineapple.%20%20I%20can%20tell%20you,%20that%20once%20you%20taste%20that%20buttery-caramelized%20pineapple,%20you%20really%20can't%20tell%20if%20it's%20fresh%20or%20canned.%20Honest.%20%20Not%20one%20person%20skipped%20eating%20the%20maraschino%20cherry.%20%20The%20cake%20was%20moist,%20and%20wasn't%20mushy%20at%20all%20from%20the%20juice.%20%20If%20anything,%20I%20think%20that%20the%20butter%20and%20brown%20sugar%20ratio%20could%20be%20reduced%20by%20about%2025%25.%20%20Nobody%20complained.%20In%20fact,%20everyone%20liked%20the%20cake%20a%20lot.%20%20Best%20of%20all,%20they%20couldn't%20believe%20how%20fast%20I%20whipped%20this%20cake%20up.%3C/p%3E%3Cp%3EThe%20next%20day,%20the%20cake%20was%20still%20good,%20though%20it%20wasn't%20warm.%20%20I%20don't%20think%20I'll%20wait%20another%2025%20years%20to%20make%20this%20again.%3C/p%3E%3Cp%3EBy%20the%20way,%20I%20think%20I%20perfected%20the%20art%20of%20making%20the%20perfect%20Mai%20Tai.%20I'll%20have%20to%20test%20a%20few%20more,%20on%20friends%20and%20family,%20just%20to%20be%20sure.%20Once%20I%20do,%20it'll%20be%20on%20the%20blog.%20%20Can%20you%20tell%20that%20Hawaii%20is%20still%20very%20much%20on%20my%20mind?%3C/p%3E%3Cp%3EAloha,%3C/p%3E){kind=link}
