- Pare the pineapple and remove the eyes. Shred with a silver fork or possibly cut into small pcs, discarding the core.
- Place pineapple in a preserving kettle and add in 3/4 as much sugar as pineapple. Allow mix to stand till a syrup is formed. Cook the mix slowly till the pineapple becomes transparent.
- Transfer mix to warm Ball canning jars, fill with boiling syrup and seal immediately.
