%20blogger%20party%20is%20hosted%20by%20Love%20&%20Olive%20Oil%20and%20The%20Little%20Kitchen.%20Each%20blogger%20is%20assigned%20three%20recipients%20to%20send%20cookies%20to%20(no%20communication%20pre-cookies!%20Bake%20a%20dozen%20and%20send%20them%20off%20then%20one%20day%20in%20the%20not%20so%20far%20future%E2%80%93*BAM!*%20cookies%20on%20your%20doorstep.%20I%20was%20super%20excited%20to%20participate%20in%20my%202nd%20cookie%20swap,%20though%20this%20year%20was%20a%20bit%20different%20as%20it%20was%20my%20first%20time%20baking%20gluten-free.%3C/p%3E%3Cp%3EI%20signed%20up%20in%20early%20October%20and%20since%20then,%20even%20before%20I%20knew%20my%20bloggers%20(who%20would%20also%20be%20gluten-free),%20I%20stressed%20about%20what%20to%20make.%20I%E2%80%99m%20not%20one%20for%20faking%20foods,%20turning%20this%20into%20that,%20but%20with%20GF%20baking,%20there%E2%80%99s%20not%20much%20room%20around%20it.%20That%20is,%20until%20my%20wonderful%20sister-in-law%20innocently%20posted%20her%20discovery%20of%20pignoli%20cookies%20being%20gluten-free.%20Little%20did%20she%20know,%20she%20saved%20my%20baking%20butt.%3C/p%3E%3Cp%3EI%20was%20so%20excited%20to%20bake%20a%20naturally%20gluten-free%20good,%20that%20I%20didn%E2%80%99t%20really%20think%20about%20what%20ingredients%20I%20was%20messing%20with.%20Powdered%20sugar,%20egg%20whites,%20almond%20paste%E2%80%93making%20pignoli%20cookies%20is%20a%20sticky%20mess%20and%20requires%20A%20LOT%20of%20patience.%20Thankfully,%20after%20all%20that%20hard%20work%20I%20was%20rewarded%20with%20some%20AMAZING%20cookies%20from%20some%20of%20my%20new%20favorite%20bloggers.%20Candy%20Cane%20Brownies%20from%20Sabrina%20at%20The%20Tomato%20Tart,%20Chocolate%20Almond%20Oat%20Cookies%20from%20Jessica%20at%20Kettler%20Cuisine%20and%20Five%20Spice%20Ginger%20Cookies%20from%20Amanda%20at%20HeartBeet%20Kitchen.%20They%20were%20all%20so%20delicious%E2%80%93I%20need%20to%20amp%20up%20my%20gluten-free%20baking%20skills!%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%C2%B0F.%20Line%20sheet%20trays%20with%20parchment%20paper.%3C/p%3E%3Cp%3ECrumble%20almond%20paste%20until%20very%20finely%20broken%20down,%20either%20with%20your%20fingers%20or%20by%20pulsing%20in%20a%20food%20processor.%20Transfer%20almond%20paste%20to%20a%20stand%20mixer,%20fitted%20with%20a%20paddle%20attachment.%3C/p%3E%3Cp%3EBeat%20together%20almond%20paste%20and%20confectioners%E2%80%99%20sugar%20until%20smooth.%20Add%20the%20honey,%20salt,%20egg%20whites%20and%20lemon%20lemon%20powder%20and%20beat%20on%20medium%20speed%20until%20the%20mixture%20is%20well%20combined%20and%20very%20thick,%20about%205%20minutes.%3C/p%3E%3Cp%3EFill%20a%20disposable%20pastry%20bag%20fitted%20with%20a%201/2-inch%20round%20tip%20with%20the%20dough.%20Push%20the%20dough%20towards%20the%20tip%20and%20cut%20the%20tip%20off%20the%20bag.%20Pipe%201-inch%20balls%20onto%20the%20prepared%20sheet%20trays.%20Top%20with%20the%20pine%20nuts,%20pressing%20them%20into%20the%20dough%20to%20secure.%20Bake%20until%20the%20cookies%20are%20golden,%20about%2015-18%20minutes.%3C/p%3E%3Cp%3EOf%20course,%20you%E2%80%99re%20probably%20wondering%20where%20my%20cookies%20went%20to%E2%80%A6I%20was%20pared%20with%20Gretchen%20at%20Kumquat%20Blog,%20Kristina%20at%20Cucina%20Kristina%20and%20Sarah%20at%20Snixy%20Kitchen.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
