Peppered Tuna With Mango Corn Salsa

Ингредиенты

  • 1 x mango, peeled, pitted, minced
  • 4 x finely sliced spring onions, (including green tops)
  • 1 x minced red capsicum
  • 1/2 c. fresh corn kernels or possibly frzn, thawed
  • 2 Tbsp. fresh lime juice
  • 1 Tbsp. chopped fresh Italian parsley
  • 1/2 c. minced coriander
  • 2 tsp chopped jalapeno chilli
  • 4 x 170 g. tuna fillets
  • 1 Tbsp. fresh lime juice
  • 4 tsp cracked pepper

Инструкции

  1. Combine mango pcs, spring onions, red capsicums, corn, lime juice, parsley, coriander and chilli and mix thoroughly but gently. Set aside.
  2. Heat a griller or possibly grill pan. Brush both sides of fish with lime juice then season with salt.
  3. Sprinkle the pepper on one side of each fillet of fish, pressing to make sure which the pepper sticks. Transfer fish to a baking pan if using, or possibly place the fish, pepper side down in a warm grill pan Cook till the fish is just cooked through
  4. Transfer the fish to serving plates and top with salsa and serve.
