- Saute/fry onion and garlic in extra virgin olive oil till brown, about 5 min. Add in tomatoes, Canadian bacon, crushed red pepper and peas and cook over medium heat for 5 min. Add in heavy cream and vodka and cook for 5 more min till sauce thickens. Meanwhile, in a separate pot, boil Penne pasta till it is al dente and drain. Place pasta on individual plates and top with tomato-vodka sauce and serve.
- Chefs Notes: Use fat free Half and Half in place of the cream.
