%3C/p%3E%3Cp%3EThe%20Peasant%20Boule%20is%20baked%20in%20an%208%20inch%20cake%20pan%20(no%20special%20equipment%20here)%20%20almost%20everyone%20has%20one%20of%20those.%3C/p%3E%3Cp%3EThe%20Peasant%20Boule%20%20is%20so%20versatile,%20anything%20%20(flavors,%20herbs,%20fruit,%20nuts)%20can%20be%20added%20to%20it,%20that%20there%20is%20virtually%20nothing%20one%20can%20do%20to%20it%20to%20mess%20it%20up.%3C/p%3E%3Cp%3EAfter%20reading%20all%20the%20great%20stuff%20about%20this%20bread%20I%20had%20to%20try%20it.%3C/p%3E%3Cp%3EAs%20it%20turned%20out,%20I%20had%20the%20perfect%20opportunity.%20I'd%20recently%20come%20into%20possession%20of%20an%20electric%20pasta%20%20machine,%20I%20had%20cured%20some%20guanciale%20(Roman%20bacon)%20that%20I%20was%20dying%20to%20try%20in%20an%20A'matriciana%20sauce%20and%20I%20was%20planning%20on%20busting%20out%20my%20new%20Ricotta%20making%20skills.%20The%20handwriting%20was%20on%20the%20wall.%20I%20was%20roots%20bound,%20I%20was%20going%20back%20to%20my%20ancestral%20origins,%20I%20was%20going%20to%20cook%20an%20Italian%20dinner.%20The%20Peasant%20Boule%20was%20going%20on%20the%20menu.%20In%20making%20Abby's%20bread,%20I%20followed%20the%20Bake%20Together%20Rules,%20and%20I%20made%20my%20own%20adjustment%20to%20the%20recipe.%20I%20decided%20to%20make%20an%20Olive%20Oil%20Rosemary%20loaf.%20You%20might%20want%20to%20try%20this%20bread%20and%20%23Baketogether%20too.%3C/p%3E%3Cp%3EPeasant%20Boule%3C/p%3E%3Cp%3EHere's%20What%20You%20Need:%3C/p%3E%3Cp%3EThe%20preparation%20of%20this%20bread%20calls%20for%20a%20stand%20mixer.%20I%20don't%20have%20one,%20but%20I%20do%20have%20a%20food%20processor%20with%20a%20dough%20blade%20and%20it%20worked%20just%20fine.%3C/p%3E%3Cp%3EHere's%20What%20To%20Do:%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20a%20food%20processor%20mix%20together%20the%20flour,%20sugar,%20salt,%20baking%20powder,rosemary%20and%20yeast.%3C/p%3E%3Cp%3ETurn%20the%20food%20processor%20on%20and%20pour%20in%20the%20warm%20water.%20The%20water%20needs%20to%20be%20at%20least%20115%20degrees%20and%20no%20more%20then%20125%20for%20this%20yeast%20to%20work.%20I%20used%20a%20cooking%20thermometer%20and%20it%20worked%20just%20fine.%3C/p%3E%3Cp%3EThe%20dough%20will%20start%20to%20come%20together%20in%20the%20bowl%20and%20will%20quickly%20turn%20bread%20ready.%20Run%20the%20food%20processor%20for%20about%205%20minutes%20or%20maybe%20a%20bit%20less.%20I%20started%20to%20get%20a%20little%20worried%20since%20it%20was%20really%20flying%20around%20and%20my%20processor%20was%20bouncing%20on%20the%20counter.%20I%20was%20afraid%20I'd%20burn%20the%20motor%20out,%20but%20no%20way.%20It%20worked!%3C/p%3E%3Cp%3EScoop%20the%20dough%20out%20and%20roll%20it%20into%20a%20ball,%20put%20the%20dough%20into%20a%20lightly%20greased%20bowl%20(I%20greased%20it%20with%20olive%20oil)%20smooth%20side%20up.%20Cover%20the%20top%20of%20the%20bowl%20tightly%20with%20saran%20wrap%20and%20let%20it%20rise%20in%20a%20warm%20place%20for%20about%2045%20minutes,%20or%20until%20it%20doubles%20in%20size.%3C/p%3E%3Cp%3EWhen%20it's%20doubled,%20dump%20it%20out%20on%20to%20a%20clean%20surface,%20(you%20don't%20have%20to%20flour%20it.)%3C/p%3E%3Cp%3EPress%20it%20down%20to%20deflate%20it.%3C/p%3E%3Cp%3EShape%20it%20into%20a%207%20inch%20round%20and%20place%20the%20whole%20thing%20in%20a%20lightly%20oiled%208%20inch%20cake%20pan.%20Yes,%20that's%20right,%20nothing%20special,%20just%20a%20plain%20old%20cake%20pan.%20I%20rubbed%20the%20top%20of%20the%20dough%20with%20a%20bit%20of%20olive%20oil,%20and%20let%20it%20rise.%3C/p%3E%3Cp%3EI%20didn't%20have%20an%208%20inch%20cake%20pan.%20I%20had%20a%209%20inch%20so%20my%20dough%20didn't%20get%20quite%20as%20tall%20as%20it%20might%20have.%3C/p%3E%3Cp%3ELet%20the%20dough%20rest%20in%20the%20cake%20pan%20until%20it's%20doubled%20again,%20about%2025%20minutes%20or%20more.%20It%20all%20depends%20on%20the%20%20temperature%20in%20the%20room%20the%20dough%20is%20sitting%20in.%20About%2015%20minutes%20before%20you're%20ready%20to%20bake%20the%20bread,%20preheat%20the%20over%20to%20375%20degrees.%3C/p%3E%3Cp%3EPut%20the%20bread%20on%20the%20middle%20rack%20in%20the%20oven%20and%20let%20it%20bake%20for%20about%2040%20minutes.%20When%20the%20bread%20turns%20brown%20on%20top%20and%20the%20top%20sounds%20hollow%20when%20tapped,%20it's%20done!%3C/p%3E%3Cp%3EPlace%20the%20pan%20of%20bread%20on%20a%20cooling%20rack.%20Take%20the%20bread%20out%20of%20the%20pan%20and%20set%20it%20on%20the%20rack%20to%20cool.%20I%20set%20mine%20down%20next%20to%20my%20newly%20made%20fresh%20pasta.%3C/p%3E%3Cp%3EServe%20and%20stand%20back%20because%20this%20stuff%20goes%20fast!%3C/p%3E%3Cp%3EThe%20peasant%20boule%20toasts%20like%20a%20dream%20and%20it's%20the%20perfect%20sandwich%20bread.%20It%20was%20the%20perfect%20accompaniment%20for%20an%20Italian%20meal,%20but%20after%20looking%20at%20all%20the%20various%20ways%20of%20interpreting%20this%20bread%20I%20can't%20wait%20to%20try%20some%20of%20the%20other%20ways%20that%20have%20been%20suggested.%20That%20is,%20if%20I'm%20allowed.%20I've%20already%20received%20orders%20from%20headquarters%20for%20more%20of%20this%20great%20rosemary%20bread.%20It%20seems%20it's%20pretty%20popular%20for%20chicken%20sandwiches%20with%20roasted%20red%20peppers%20around%20our%20house.%20I%20on%20the%20other%20hand,%20am%20itching%20to%20try%20it%20with%20figs,%20or%20olives%20or%20orange%20zest%20for%20a%20great%20brunch%20treat.%20Okay,%20I%20have%20to%20make%20a%20confession%20here.%20Visions%20of%20French%20Toast%20have%20already%20danced%20through%20my%20head,%20but%20I'm%20not%20saying%20anything%20about%20it%20right%20now.%3C/p%3E%3Cp%3EComing%20up%20next,%20I%20am%20no%20longer%20a%20pasta%20machine%20virgin%20as%20I%20present%20electric%20vermicelli%20bugaloo.%20Follow%20along%20on%20Twitter%20@kathygori%3C/p%3E){kind=link}
