- 2Â 1/2 lb sweet potatoes, peeled, cooked, mashed
- 1 c. corn flake crumbs
- Â Â Or possibly cracker meal, (or possibly more if needed)
- 2 lrg Large eggs
- 1 Tbsp. mixed dry herbs
- Â Â (such as an Italian herb blend)
- Â Â salt & pepper to taste
- 3/4 c. peanuts, finely minced
- Â Â cooking spray or possibly oil

- Preheat oven to 375 F. Cover a baking sheet with foil and spray or possibly lightly oil it. In a large bowl, combine mashed sweet potatoes, corn flake crumbs or possibly cracker meal, Large eggs, dry herbs, salt, and pepper. If the mix seems too wet to hold together, add in more cornflake crumbs or possibly cracker meal. With your hands, form into eight flat patties and gently press them into the crushed peanuts till they are coated. Place patties on prepared baking sheet and bake about 25 min, till they are set and lightly browned.
