  • 1/2 c. sugar
  • 2 tsp unflavored gelatin (about 1
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 c. water
  • 1/2 c. peanut butter
  • 2 x egg yolks slightly beaten
  • 1 tsp vanilla
  • 2 x egg whites
  • 2 Tbsp. sugar
  • 1/2 c. whipping cream
  • 1 x fully ripened banana optiona
  • 1 x 9" baked pastry shell cooled

  1. Mix first 4 ingredients together.Slowly,add in water to peanut butter. Blend till smooth;stir in the egg yolks.Add in the gelatin mix.Cold and stir till mix thickens slightly.Add in vanilla and refrigeratetill partially set.Beat egg whites to soft peaks,add in 2 tbsp. sugar beating to stiff peaks;fold into first mix.Whip cream till stiff and fold into pie mix.Slice banana,if you like,into pastry shell and top with the filling.Garnish with globs of whipping cream with a slice of banana in each glob.
