Peanut butter and banana muffins

  • DRY INGREDIENTS:
  • 2 cups whole wheat flour
  • 1/2 cup brown sugar
  • 1 tbsp baking soda
  • 1/4 cup walnut or pecan pièces
  • 1/2 tsp salt
  • 1/4 cup grounded flax seeds
  • WET INGREDIENTS:
  • 4 large bananas, mashed
  • 1/2 cup butter, melted
  • 1/4 cup milk plus 1 tsp lemon juice = buttermilk
  • 3 medium eggs or 2 extra large
  • 1 tsp vanilla extract
  • 1 cup smooth peanut butter

  1. Pre-heat oven to 375 degrees F.
  2. Place all the wet ingredients in a large bowl and mix with an electric mixer.
  3. Place all the dry ingredients in a large bowl and mix with a wooden spoon.
  4. Now add the dry ingredients to the wet ingredients, one cup at a time while mixing with the electric mixer. DO NOT OVERMIX.
  5. Grease large muffin tins with oil and place paper muffin cups in each space. Fill each muffin cup 3/4 full with this mixture. Bake 18 to 22 minutes or until a toothpick comes out clean. Let cool and unmold.
