- Pre-heat oven to 375 degrees F.
- Place all the wet ingredients in a large bowl and mix with an electric mixer.
- Place all the dry ingredients in a large bowl and mix with a wooden spoon.
- Now add the dry ingredients to the wet ingredients, one cup at a time while mixing with the electric mixer. DO NOT OVERMIX.
- Grease large muffin tins with oil and place paper muffin cups in each space. Fill each muffin cup 3/4 full with this mixture. Bake 18 to 22 minutes or until a toothpick comes out clean. Let cool and unmold.
