%20versatility%20of%20the%20majestic%20muffin.%3C/p%3E%3Cp%3ELast%20week,%20one%20of%20the%20gals%20I%20met%20on%20my%20fan%20page%20over%20in%20Facebook%20told%20me%20about%20a%20couple%20of%20her%20favorite%20muffin%20recipes.%20And%20she%20said%20I%20could%20blog%20about%20her%20muffins.%20Thank%20you%20Char!%20You're%20a%20doll!%3C/p%3E%3Cp%3EThis%20recipe%20is%20a%20version%20of%20her%20Blueberry%20Cream%20Muffin%20recipe,%20which%20she%20adapted%20from%20a%20recipe%20she%20found%20on%20Allrecipes.%3C/p%3E%3Cp%3EBlueberries%20weren't%20on%20sale%20so%20I%20decided%20to%20use%20some%20canned%20peaches%20and%20then%20added%20some%20cinnamon.%20That's%20basically%20all%20I%20did%20differently.%20Oh...and%20I%20doubled%20the%20vanilla%20:)%3C/p%3E%3Cp%3EI%20also%20had%20some%20bloopers.%20Stay%20tuned...I'll%20share%20them%20at%20the%20end%20of%20this%20post%20(just%20like%20how%20they%20do%20in%20the%20movies%20at%20the%20end)%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20375'%20and%20prepare%2018%20-%2024%20muffin%20tins%3C/p%3E%3Cp%3ECombine%20the%20flour,%20sugars,%20salt,%20baking%20soda%20and%20cinnamon%20in%20a%20large%20bowl.%20In%20another%20large%20bowl%20combine%20the%20eggs,%20oil%20and%20vanilla%20extract.%3C/p%3E%3Cp%3EStir%20your%20dry%20ingredients%20into%20the%20egg%20mixture,%20alternately%20with%20the%20sour%20cream.%20Gently%20fold%20in%20the%20peaches.%20Don't%20over%20stir!%3C/p%3E%3Cp%3EScoop%20batter%20into%20the%20prepared%20tins%20and%20bake%20for%20about%2020%20-%2025%20minutes%20or%20until%20a%20toothpick%20comes%20out%20clean%20when%20poked%20in%20the%20middle%20of%20a%20muffin.%3C/p%3E%3Cp%3ELet%20cool%20for%20about%205%20minutes%20before%20removing%20from%20the%20tins.%3C/p%3E%3Cp%3EIf%20desired,%20top%20the%20muffins%20with%20a%20cinnamon%20sugar%20mixture%20prior%20to%20baking.%20If%20you%20forget%20(like%20I%20did%20for%20the%20second%20batch%20cuz%20I%20was%20so%20hung%20up%20on%20my%20blooper)%20then%20sprinkle%20the%20tops%20as%20soon%20as%20they%20come%20out%20of%20the%20oven.%20Or%20you%20can%20top%20them%20with%20a%20streusel%20prior%20to%20cooking,%20as%20Char%20recommended.%3C/p%3E%3Cp%3EA%20nice%20gentle%20flavor,%20sweet,%20and%20very%20moist!%20A%20lovely%20recipe%20with%20great%20results.%20If%20I%20were%20to%20change%20anything,%20other%20than%20the%20fruit%20(cuz%20thats%20so%20easy%20to%20do)....I%20might%20add%20a%20little%20baking%20powder%20for%20a%20higher%20rise.%3C/p%3E%3Cp%3EJust%20to%20warn%20you...I%20think%20I%20have%20about%202%20more%20recipes%20I%20want%20to%20explore%20:)%3C/p%3E%3Cp%3ENow%20for%20the%20bloopers.%3C/p%3E%3Cp%3ELet%20me%20explain%20myself%20first.%20My%20desire%20was%20to%20make%20jumbo%20muffins.%20So%20I%20really%20really%20filled%20up%20those%20muffin%20tins.%20And%20well....%3C/p%3E%3Cp%3EI%20ended%20up%20with%20one%20great%20big%20huge%20muffin%20top!%20(I%20swear%20they%20were%20mocking%20me!!!)%20I%20had%20to%20cut%20them%20in%20order%20to%20separate%20them.%20Then,%20when%20I%20tried%20to%20remove%20them?%20Well...the%20tops%20wanted%20to%20come%20off%20without%20the%20muffin%20(kinda%20wish%20my%20muffin%20top%20would%20do%20that!!!!!!)%3C/p%3E%3Cp%3EThats%20when%20I%20decided%20a%20different%20approach%20was%20needed.%20The%20old,%20cover%20and%20flip%3C/p%3E%3Cp%3EThen%20flip%20again%20so%20I%20wouldn't%20end%20up%20with%20cooling%20rack%20grooves%20embedded%20in%20my%20muffins.%3C/p%3E%3Cp%3EAnd%20well....in%20the%20end%20I%20had%20this....%3C/p%3E%3Cp%3EThe%20enchanted%20forrest%20of%20peaches%20and%20cream%20mushroom%20muffins.%20(I%20almost%20expect%20a%20smurf%20to%20appear).%3C/p%3E%3Cp%3EI%20have%20to%20say%20though...that%20top,%20which%20was%20sprinkled%20with%20cinnamon%20sugar%20was%20the%20best%20part!%20All%20nice%20and%20crunchy%20on%20the%20edges%20and%20everything.%20Ya%20baby!%3C/p%3E){kind=link}
