It’s hard to believe another month is flying by as we (sadly) say goodbye to summer. As the month winds down it also means that it’s time for The Recipe Redux again. This month’s theme once again is very fitting. . .

My freezer is fantastic, and it always has an ample supply of leftovers from previous meals or fresh fruits and vegetables that weren’t eaten fast enough when they were in season. I can always find something quick to eat in my trusty freezer when I don’t have a lot of time to cook.
The freezer meal that I am sharing for this Redux is not a heat and eat though; it’s a freeze and eat. Breakfast is the one meal that I want to make quickly, especially on busy mornings. I make up bags of portioned frozen fruits and vegetables for smoothies.
When it’s smoothie time, I open up the bag and pour the contents into a blender, add some nuts or seeds and water – breakfast is ready! I like my smoothies thick so I can eat them with a spoon, and the avocado and chia seeds help with that.
I recently picked a basket of peaches at the farmer’s market, and turned some of the peaches into smoothie bags. I love the refreshing taste of ginger and mint; and the peaches add a touch of sweetness! This one is going to be on my favorite list for a while!
Peach & Ginger Green Smoothie Bowl
Ingredients
Make ahead ingredients:
- 2/3 cup packed baby spinach
- 1 large peach - sliced
- 1/2 avocado cubed
- 1/8 teaspoon fresh ginger - chopped
- 5 fresh spearmint leaves
- To make smoothie bowl:
- 1 cup water
- 1 1/2 tablespoons chia seeds
- 1 tablespoon of hemp or flax seeds
- sprinkling of nuts, granola or dried fruit
Instructions
Make ahead:
place spinach, sliced peach, avocaco cubes, ginger and spearmint leaves into a freezer container or plastic bag
Place in freezer
To make smoothie bowl:
Add frozen ingredients to a blender
add water and seeds
blend until thick and creamy
Top with nuts or granol and serve in a bowl or take it on the go in a jar.
