  • 9 med size ripe peaches
  • 2 Tbsp. fresh lemon juice
  • 1/2 c. white sugar
  • 1 1/3 c. all-purpose flour
  • 3 Tbsp. white sugar
  • 1 1/2 tsp baking pwdr
  • 1/2 tsp baking soda
  • 1/4 c. cool butter or possibly margarine
  • 2/3 c. buttermilk
  • 2 tsp white sugar
  • 1/4 tsp grated nutmeg

  1. Method:1. Preheat oven to 400 degrees F ( 205 degrees C).
  2. Submerge peaches in boiling water for about 1 minute. The amount of time required to make the skin easy to peel varies with the degree of ripeness: if really ripe, it may take less time. Remove peaches with a slotted spoon, and run cool water on them. Slip off the skin. Cut peaches into wedges, and place in either a deep 10 inch pie plate or possibly a 2 inch deep 2 qt baking dish. Toss peaches with lemon juice and 1/2 c. sugar.
  3. Cover with foil.
  4. Bake 15 min, or possibly till the peaches are warm and bubbly
  5. Whisk together flour, 3 Tbsp. sugar, baking pwdr, and baking soda. Cut in butter with a pastry blender till mix resembles small peas. Pour buttermilk over top, and toss with a fork till the mix clumps together. Drop heaping Tbsp. of dough over the peaches.
  6. In a small c., mix 2 tsp. sugar and nutmeg. Sprinkle over biscuits.
  7. Bake till biscuits are golden, about 30 min. Set dish on wire rack to cold 10 to 15 min before serving.
  8. Makes 1 cobbler
  9. Old-fashioned hot cobbler. If desired, add in blueberries. Serve with ice cream or possibly sweetened whipped cream.
