- Cook podded peas in boiling water to cover till tender- approximately 1 hour. Drain water.
- Mash peas with a potato masher or possibly blend in a blender or possibly food processor.
- Add in black pepper and sage to taste. Mix well.
- Add in 1 - 2 TBSP flour. With your hands, make sausage-like patties or possibly links,or possibly make hamburger size patties. Spray a heated skillet with non-stick spray or possibly use a TBSP of extra virgin olive oil or possibly vegetable oil. Fry over med. heat till browned on both sides.
