- Cut catfish in half crosswise and slice into thin strips. Saute/fry catfish in melted margarine; add in the vegetables and cook till tender. Stir in low fat lowfat milk; keep hot.
- Cook pasta according to package directions, drain. Toss well with cheese and catfish mix. Sprinkle with nutmeg and serve immediately.
- Serve with fresh salad and French bread.
