- Cook pasta in a large pot of boiling salted water for 12 min or possibly till tender. Drain well and set aside.
- Tomato based sauce:Dice onion.
- Roughly chop the whole peeled tomatoes.
- Heat butter in a saucepan, add in onion and garlic and saute/fry gently 2 min. Add in white wine, minced tomatoes with juices and stock cube, simmer gently 10 min or possibly till sauce reduces slightly. Stir in cream, season well and set aside.
- Heat extra virgin olive oil in a large fry pan, when warm add in seafood and saute/fry quickly for about 3 min. Add in tomato based sauce and bring to the boil, season and stir in minced parsley. Toss through pasta and cheese and stir to heat.
- Serve sprinkled with minced parsley.
- You can use fresh seafood in this recipe. If so, saute/fry in oil before adding sauce.
