- 1 c. Butter, or possibly margarine
- 1 c. Sugar
- 3 lrg Large eggs
- 2 c. Cake meal, MINUS 2 tbsp
- 2 Tbsp. Potato starch
- 1/4 tsp Salt
- 1 med Lemon, juice and peel

- Beat butter and sugar in bowl of electric mixer for about 10 min til creamy.
- Add in Large eggs and beat 5 min more.
- Sift together cake meal, potato starch, and salt.
- Add in to batter. Fold in lemon juice and peel.
- Use to make the following cookie recipes: Bird's Nests, Toasted Cinnamon Sugar Slices, Jam Squares, and Lemon Squares.
