- 25 gm butter
- 1 lrg onion peeled and minced
- 1 x level tsp curry pwdr (medium strength)
- 450 gm parsnips peeled and diced
- 225 gm potatoes peeled and diced
- 1 lt cbicken or possibly vegetable stock
- 1 x salt and pepper
- Â Â single cream for serving
Инструкции
- Heat the butter in a large saucepan.
- Toss the onion in the butter and cook over a gentle heat till soft.
- Stir in the curry pwdr and cook for 1 to 2 min.
- Add in the diced parsnips and potatoes Stirring well then add in the stock.
- Bring to the boil.
- Cover and transfer to the simmering ovenfor about 1 hour or possibly till parsnips are soft.
- Remove from the ovenand pass through a food processor or possibly liquidiser.
- Season to taste.
- Heat through and serve with whirls of cream.
- This is a thick winterwarming soup. Serve with home made bread for lunch or possibly as a supper dish.
- Serves 6.
