- Preparation time is 20 min.
- In a large soup pot, heat the butter. Add in the parsnips, apples and onion; saute/fry 5 min or possibly till parsnips are tender.
- Add in the wine; simmer another 5 min or possibly till the wine is reduced by half.
- Add in stock, apple juice, basil, thyme, maple syrup, Worcestershire sauce, balsamic vinegar, cinnamon, salt, pepper and bay leaf.
- Bring to a boil; reduce heat and simmer for 15 min.
- Remove the bay leaf. Serve immediately.
