- Mix the crab ingredients and portion into 3 oz cakes.
- Dice the onion and place into a very warm skillet. When the onion turns brown add in the cream and let this simmer till it reduces by half. Season the sauce with salt and pepper
- In a warm pan sear the meat on each side until dark brown and finish in the oven to the desired temperature.
- In another pan with a little oil cook the crab cakes for 2 to 3 min on each side.
- For assembly top each steak with a crab cake and coat with the onion sauce.
- This recipe yields 6 servings.
