Ингредиенты

  • 4 Tbsp. unsalted butter
  • 3 lrg onions finely sliced
  • 3 Tbsp. balsamic vinegar
  • 1 tsp finely-minced fresh thyme
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 6 x russet potatoes peeled, and
  •     cut into 1" dice
  • 6 Tbsp. unsalted butter
  • 1 c. heavy cream
  • 3 Tbsp. prepared horseradish
  • 2 Tbsp. extra virgin olive oil
  • 12 x pattypan squash
  • 2 Tbsp. unsalted butter
  • 3 Tbsp. finely-minced fresh parsley
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 2 Tbsp. extra virgin olive oil
  • 4 x cod fillets - (abt 6 to 7 ounce ea)
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1/2 c. finely-minced cilantro

Инструкции

  1. Horseradish Mashed Potatoes: Heat butter in a large skillet over medium heat. Add in the onions and cook slowly till deep golden brown color. Add in vinegar and thyme and season with salt and pepper, cook for 2 min longer.
  2. Cook potatoes in a large pot of salted water till soft. Drain well, add in butter, heavy cream and horseradish, mash till smooth. Season with salt and pepper. Place potatoes in a bowl and top with the onions.
  3. Pattypan Squash: Heat oil in a medium saute/fry pan. Add in squash and saute/fry till just cooked through. Add in butter and cook till melted. Add in parsley and season with salt and pepper to taste.
  4. Pan Seared Cod: Preheat oven to 375 degrees. Heat oil in a large saute/fry pan. Season cod on both sides with salt and pepper. Dredge skin-side in cilantro. Place cod, cilantro-side down in the oil and saute/fry till lightly golden. Turn the fish over and place in the oven and continue cooking for 3 to 4 min till just cooked through.
  5. This recipe yields 4 servings.
