%3C/p%3E%3Cp%3EI%20was%20up%20early%20this%20morning%20and%20decided%20to%20treat%20myself%20with%20a%20slice%20of%20warm%20tea%20bread%20with%20my%20morning%20cafe.%20My%20choice?%3C/p%3E%3Cp%3EA%20lovely%20recipe%20adapted%20from%20Rose%20Levy%20Bernbaum's%20Cake%20Bible%20(an%20absolute%20favorite%20of%20mine).%20This%20book%20is%20a%20MUST%20for%20anyone%20who%20wants%20to%20learn%20to%20bake%20or%20polish%20their%20skills.%20Rose%20explains%20the%20%22science%22%20of%20baking%20and%20all%20the%20whys%20and%20wherefores%20of%20the%20structures%20we%20create%3C/p%3E%3Cp%3ELemon%20Poppyseed%20Pound%20Cake%3C/p%3E%3Cp%3EWant%20the%20recipe??%3C/p%3E%3Cp%3ECome%20join%20us%20on%20Facebook-%20this%20is%20tonights'%20Bonus%20Recipe!%3C/p%3E%3Cp%3EToday's%20Meatless%20Monday%20meal%20made%20a%20lovely%20lunch.%3C/p%3E%3Cp%3EHaloumi%20is%20a%20sheep's%20milk%20cheese%20from%20Cyprus.%20It's%20got%20a%20mild%20flavor,%20and%20is%20quite%20similar%20to%20Italian%20mozzarella%20but%20with%20a%20different%20texture.%20Haloumi%20actually%20doesn't%20melt%20and%20can%20be%20grilled%20or%20pan-fried%20so%20it%20softens%20and%20develops%20a%20golden%20%22crust%22.%3C/p%3E%3Cp%3EQuite%20frankly,%20on%20it's%20own%20Haloumi%20is%20not%20my%20favorite%20cheese,%20but%20with%20a%20lovely%20Mediterranean%20%22salsa%22%20it%20makes%20a%20wonderful%20and%20satisfying%20dish.%20I%20have%20a%20dear%20friend%20who%20LOVES%20this%20dish%20simply%20plated%20as%20you%20see%20in%20these%20pictures.%20I%20actually%20prefer%20to%20make%20a%20very%20delicious%20panini%20out%20of%20it.%20I%20brushed%202%20artisan%20ciabatta%20slices%20with%20garlic-%20infused%20olive%20oil,%20added%20a%20couple%20of%20slices%20of%20very%20ripe%20garden%20tomato,%20the%20fried%20cheese%20and%20salsa.%20Then%20a%20few%20minutes%20in%20my%20handy%20panini%20grill%20and%20a%20fabulous%20lunch%20was%20complete.%3C/p%3E%3Cp%3ECan%20you%20believe%20I%20forgot%20to%20take%20pictures??%20It%20seems%20my%20brain%20cells%20start%20to%20die%20a%20bit%20when%20I'm%20hungry!%3C/p%3E%3Cp%3EThis%20is%20fast%20and%20easy-%20Enjoy!%3C/p%3E%3Cp%3EHeat%203%20tblsp%20oil%20in%20skillet%20(I%20use%20cast%20iron)%20till%20hot%20over%20medium%20heat.%20Saute%20onion%20and%20fennel%20for%20a%20few%20minutes,%20stirring%20frequently.%20You%20don't%20want%20it%20to%20brown.%20Season%20with%20salt%20and%20pepper,%20lower%20heat,%20and%20keep%20sauteeing%20till%20soft,%20but%20not%20brown.%20Stir%20in%20olives,%20zests,%20mint,%20tomatoes,%20and%20last%20tblsp.%20of%20oil.%20Take%20off%20heat%20and%20set%20aside,%20covered.%20Heat%20another%20non-stick%20skillet%20(I%20use%20cast%20iron%20or%20my%20Calphalon)%20till%20hot%20(no%20oil).%20Add%20Haloumi%20and%20cook%20till%20both%20sides%20are%20lightly%20golden,%20flipping%20after%20first%20side%20colors.%3C/p%3E%3Cp%3EPlace%20slices%20on%20serving%20plate%20(or%20panini)%20and%20top%20with%20some%20of%20salsa.%3C/p%3E%3Cp%3EHave%20a%20wonderful%20Labor%20Day!%3C/p%3E%3Cp%3EAs%20Always,%3C/p%3E%3Cp%3EBuon%20Cibo,%20Buon%20Amici,%3C/p%3E%3Cp%3EPattie%20and%20Allie%3C/p%3E){kind=link}
