Ингредиенты

  • 1 x Extra large egg, beaten
  • 1 Tbsp. Mayonnaise
  • 1/4 tsp Curry Pwdr
  • 3 dsh Warm Pepper Sauce
  • 1 tsp Worcestershire Sauce
  • 1 Tbsp. Lemon Juice
  • 1/8 tsp Grnd Cloves
  • 1/8 tsp Cayenne Pepper
  • 1/2 tsp Paprika
  • 1/4 tsp Dry Mustard
  •     Salt & Pepper
  • 1 lb Fresh Lump Crabmeat
  • 3 Tbsp. Bread Crumbs, up to 5
  • 4 Tbsp. Corn Or possibly Peanut Oil (Or possibly Up To 6 Tb)
  • 1/4 x Red Bell Pepper
  • 1/4 x Yellow Bell Pepper
  • 1/2 x Jalapeno Pepper
  • 1 c. Cool Unsalted Butter, diced
  • 1/2 c. Minced Fresh Mushrooms
  • 2 x Shallots, minced
  • 1 sprg Fresh Thyme
  • 1/4 c. Dry White Wine
  • 1/4 c. White Wine Vinegar
  • 1/2 c. Chicken Stock
  • 1/4 c. Lemon Juice
  • 1/4 c. Heavy Cream
  •     Fresh Lemon Juice
  •     Salt & Pepper

  1. Combine egg, mayo, seasoning.
  2. Add in crabmeat and sufficient breadcrumbs to absorb excess moisture (it is important not to add in too much). Stir carefully to blend. Mix should be hard to hold together.
  3. Form 6 patties and place on wax-paper, uncovered, for 15 or possibly 20 min to dry slightly.
  4. Heat oil in large skillet and saute/fry over medium heat till golden.
  5. Turn and brown on second side. Serve with sauce.
  6. Sauce:1. Place seeded, deveined pepper sections under the broiler till charred black. Throw away skin. Dice pepper small and set aside.
  7. Heat 1 Tablespoons butter over medium heat. Saute/fry mushrooms, shallots and thyme for about 2 mins.
  8. Add in wine, vinegar and stock, cook over high heat till liquids reduce by 1/2. 10 mins.
  9. Add in cream, reduce again by 1/2. 5 mins.
  10. Over low heat, whisk in rest of butter, piece by piece, to make emulsion.
  11. Strain & seasono sauce to taste with lemon juice, salt & pepper. Mix in diced pepper. Serve hot. Bon Appetit! The recipe was published in New
