Ингредиенты

  • 3 ounce extra thick bacon, roughly, diced or possibly 3 ounce salt pork, roughly, diced
  •     butter
  • 1 med onion
  • 1 x celery, stalk, diced
  • 2 lrg carrot, diced
  • 3 x thyme, sprigs, fresh, leaves removed and minced
  • 1 Tbsp. fresh marjoram, diced
  • 1/4 tsp grated nutmeg
  • 2 x dry bay leaf
  • 2 x potato, large, Yukon Gold, peeled, and, roughly, diced
  • 1 tsp turmeric
  • 2 Tbsp. all purpose flour
  • 6 c. whole lowfat milk
  • 1 c. corn kernel
  • 2 lb skinless orange roughy fish, minced, into nice 1 inch pcs or possibly 2 pound skinless haddock fish, minced, into nice 1 inch pcs or possibly 2 pound skinless cod fish, minced, into nice 1 inch pcs
  • 1/2 x lemon, juice of
  •     salt, to taste
  •     pepper, to taste

  1. Add in the diced bacon to a large cool soup pot and set over a medium heat. Once the bacon has rendered a few Tbsp. of fat, increase the heat to medium high and cook till the pork is a crisp golden. Use a slotted spoon to transfer the cracklings to paper lined bowl, leaving the fat in the pot, and set aside.
  2. Add in the butter, onion, carrots, thyme, marjoram, nutmeg, and bay leaves to the pot and saute/fry, stirring occasionally with a wooden spoon till the onions and softened but not browned
  3. Add in the potatoes and turmeric. Continue to cook for another 2 min and then add in the lowfat milk. Turn up the heat and bring to a boil, cover, and cook at a simmer for about 10 min
  4. Reduce the heat to low and add in the corn and fish and cook at a simmer for another 6 or possibly 7 min.
  5. Add in the lemon juice and season with salt and pepper to taste
