%3C/p%3E%3Cp%3EEvery%20weekend%20I%20cook%20make-ahead%20breakfasts%20for%20the%20weekday%20mornings.%20Every%20weekend%20morning%20I%20usually%20start%20on%20breakfast%20before%20my%20first%20sip%20of%20coffee.%20And%20whenever%20we%20have%20company,%20the%20responsibility%20of%20breakfast%20usually%20falls%20on%20me.%3C/p%3E%3Cp%3EI%20really%20don%E2%80%99t%20mind%20at%20all;%20I%20actually%20enjoy%20making%20breakfast%20as%20Allison%20makes%20coffee%20or%20espresso.%20Once%20upon%20a%20time%20the%20first%20words%20out%20of%20my%20mouth%20in%20the%20mornings%20usually%20had%20to%20do%20with%20acquiring%20coffee%20while%20Allison%E2%80%99s%20first%20words%20upon%20waking%20up%20were%20always%20about%20how%20hungry%20she%20was.%20Our%20conversations%20would%20consist%20of%20her%20saying%20%E2%80%9CI%E2%80%99m%20hungry%E2%80%9D%20and%20I%20would%20just%20answer%20with%20%E2%80%9CCOFFEE.%E2%80%9D%3C/p%3E%3Cp%3EIt%20shows%20how%20our%20relationship%20has%20wonderfully%20grown%20when%20the%20first%20thing%20we%20do%20now%20when%20we%20get%20up%20it%20is%20go%20to%20the%20kitchen%20and%20make%20things%20for%20each%20other%20%E2%80%94%20she%20always%20gets%20me%20caffeinated%20while%20I%20start%20breakfast.%20We%20take%20care%20of%20each%20other%20like%20that.%3C/p%3E%3Cp%3ELately,%20by%20special%20request,%20I%E2%80%99ve%20been%20making%20Joy%20The%20Baker%E2%80%99s%20lemon%20poppy%20seed%20pancakes.%20I%20love%20this%20recipe%20%E2%80%94%20it%E2%80%99s%20so%20simple%20and%20it%20makes%20enough%20to%20feed%204%20people%20easily.%20Of%20course%20we%20usually%20just%20freeze%20half%20the%20batter%20and%20defrost%20it%20in%20time%20to%20have%20the%20pancakes%20a%20second%20weekend%20in%20a%20row.%20Also,%20we%20never%20keep%20buttermilk%20in%20our%20fridge,%20so%20we%20sometimes%20make%20buttermilk%20with%20milk%20and%20lemon.%20But%20then%20we%20also%20rarely%20ever%20have%20milk,%20so%20in%20place%20of%20milk,%20I%20use%20almond%20milk%20and%20Greek%20yogurt.%3C/p%3E%3Cp%3EThe%20last%20time%20we%20were%20eating%20these%20pancakes%20we%20were%20discussing%20items%20to%20bring%20to%20a%20potluck%20or%20event%20and%20I%20remembered%20that%20Allison%20has%20an%20awesome%20recipe%20from%20her%20friend%20Rachel%20for%20a%20chocolate%20mousse%20that%20she%20made%20for%20our%20first%20New%20Year%E2%80%99s%20Eve%20together.%20We%20dipped%20clementine%20wedges%20into%20it%20and%20it%20was%20lovely.%20I%20requested%20that%20she%20make%20the%20chocolate%20mousse%20for%20my%20birthday%20a%20month%20after%20that%20and%20even%20though%20I%20had%20the%20flu%20(on%20my%20birthday!!),%20I%20still%20ate%20it%20with%20clementines.%3C/p%3E%3Cp%3EThe%20flavors%20of%20chocolate%20and%20orange%20always%20remind%20me%20of%20the%20cold%20winter%20months.%20The%20tang%20of%20the%20orange%20compliments%20and%20brightens%20the%20rich%20chocolate.%20It%E2%80%99s%20a%20combination%20that%20I%20never%20thought%20I%20would%20like,%20but%20I%20was%20so%20very%20wrong.%3C/p%3E%3Cp%3EThe%20discussion%20about%20what%20to%20make%20for%20the%20potluck%20was%20quickly%20forgotten%20while%20I%20daydreamed%20about%20chocolate%20and%20citrus.%20When%20I%20had%20taken%20by%20next%20bite%20of%20my%20lemony%20poppy%20seed%20pancake,%20I%20realized%20that%20this%20recipe%20could%20be%20easily%20modified%20to%20include%20chocolate%20and%20orange%20(instead%20of%20lemon).%20So%20the%20idea%20was%20born.%3C/p%3E%3Cp%3EA%20few%20weeks%20later%20(pancakes%20are%20a%20rare%20treat%20in%20our%20home,%20since%20they%E2%80%99re%20so%20decadent),%20I%20started%20the%20experiment.%20Instead%20of%20the%20lemon%20zest%20and%20juice,%20I%20used%20the%20zest%20and%20juice%20from%20half%20an%20orange.%20Instead%20of%20the%20buttermilk,%20I%20used%20Greek%20yogurt%20and%20almond%20milk.%20I%20tried%20it%20out%20with%20four%20tablespoons%20of%20cocoa%20powder.%20The%20pancakes%20were%20light%20and%20fluffy%20%E2%80%94%20perfect%20with%20maple%20syrup.%3C/p%3E%3Cp%3EEven%20though%20Allison%20doesn%E2%80%99t%20like%20chocolate%20cake,%20she%20loved%20these%20pancakes,%20and%20requested%20that%20I%20add%20even%20more%20chocolate%20and%20more%20orange.%20The%20final%20recipe%20has%20the%20zest%20and%20juice%20of%20a%20whole%20orange,%20and%20six%20tablespoons%20of%20cocoa%20for%20more%20intense%20chocolate%20and%20orange%20flavors.%3C/p%3E%3Cp%3ERECIPE:%3C/p%3E%3Cp%3EOrange%20Chocolate%20Pancakes%3C/p%3E%3Cp%3E(Adapted%20from%20Joy%20the%20Baker%E2%80%99s%20Lemon%20Poppy%20Seed%20Pancakes.)%3C/p%3E%3Cp%3E(Serves%204-5,%20Makes%2014-16%20pancakes%20/%20batter%20freezes%20well;%20defrost%20overnight%20in%20the%20fridge)%3C/p%3E%3Cp%3EActive%20time:%2020%20minutes;%20Total%20time:%2025%20minutes.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E~%20clementine%20wedges,%20for%20serving%3C/p%3E%3Cp%3EHow%20to%20make%20it:%3C/p%3E%3Cp%3E1.%20In%20a%20small%20bowl,%20add%20the%20orange%20zest%20to%20the%20sugar.%20With%20your%20fingertips,%20mix%20the%20sugar%20and%20the%20zest%20to%20allow%20th
