%20Happy%20New%20Year,%20have%20your%20cocktail%20in%20a%20solid%20form%20-%20Photo%20by%20Wasabi%20PrimeThis%20isn't%20even%20my%20recipe,%20this%20was%20something%20Mr.%20Wasabi,%20the%20Brock-ness,%20put%20together%20when%20he%20was%20supplying-up%20for%20his%20beer%20brewing%20upgrade.%20He%20bought%20several%20bottles%20of%20agar%20agar%20powder,%20which%20is%20a%20seaweed%20derivative%20that's%20used%20as%20a%20natural%20thickener.%20For%20beer%20brewing%20purposes,%20it's%20used%20to%20clarify%20the%20beer,%20helping%20to%20remove%20impurities%20that%20cloud%20up%20the%20liquid.%20As%20it%20binds%20to%20the%20proteins,%20it%20thickens%20and%20is%20just%20heavier,%20so%20it%20sinks%20or%20%22falls%20out%22%20and%20takes%20the%20cloudy%20junk%20with%20it,%20leaving%20a%20tasty%20clear%20beer.%20Neat,%20right?%20Agar%20is%20basically%20like%20gelatin,%20but%20vegetarian-friendly,%20since%20it's%20not%20made%20of%20cow%20hooves.%20But%20I'm%20sure%20the%20seaweed%20screamed%20in%20agony%20as%20they%20were%20pulverized%20and%20rendered%20to%20a%20dusty%20powder%20form.%20Oh,%20the%20humanity!%3C/p%3E%3Cp%3EBrock%20is%20a%20pretty%20savvy%20food%20guy%20and%20definitely%20appreciates%20the%20legacy%20of%20Ferran%20Adria%20and%20the%20molecular%20gastronomy%20movement,%20so%20of%20course%20when%20you%20have%20bottles%20of%20agar%20powder,%20you%20have%20to%20play%20around%20a%20little.%20He%20decided%20to%20make%20%22caviar%22%20from%20one%20of%20our%20favorite%20liqueurs,%20St.%20Germain,%20a%20sweet%20little%20number%20made%20from%20elderflowers,%20in%20probably%20one%20of%20the%20prettiest%20bottles%20you'll%20ever%20see.%20Why%20St.%20Germain?%20It%20has%20a%20light%20flavor,%20not%20too%20acidic%20so%20that%20it%20would%20react%20with%20the%20agar%20and%20be%20difficult%20to%20gelatinize,%20and%20mostly%20because%20it's%20high%20in%20sugar.%20This%20is%20why%20Brock%20does%20this%20stuff%20and%20not%20me,%20he's%20much%20more%20aware%20of%20things%20like%20volume,%20density,%20and%20all%20the%20stuff%20I%20fell%20asleep%20to%20in%20chemistry%20class.%3C/p%3E%3Cp%3EAbout%20maybe%20a%20cup's%20worth%20of%20little%20gelatinized%20spheres%20of%20St.%20Germain%20were%20made%20from%20his%20experiment.%20Not%20a%20lot,%20but%20you're%20not%20eating%20them%20like%20a%20bowl%20of%20oatmeal.%20You%20could,%20but%20it%20would%20be%20weird.%20They're%20solid%20spheres,%20not%20like%20the%20jelly-skinned%20spheres%20that%20keep%20a%20liquid%20center%20--%20he%20does%20want%20to%20play%20with%20that%20option,%20but%20this%20was%20a%20good%20first-time%20attempt%20playing%20with%20the%20new%20ingredient%20toys.%20The%20nice%20thing%20about%20making%20fully%20gelatinized%20spheres%20is%20you%20can%20make%20them%20ahead%20of%20time%20and%20keep%20them%20in%20the%20refrigerator%20for%20a%20day%20or%20two.%20Since%20these%20were%20made%20from%20St.%20Germain,%20they%20were%20sweet%20and%20fruity%20--%20they%20were%20really%20good%20spooned%20on%20fresh%20pear%20slices.%20They%20would%20make%20a%20nice%20accompaniment%20to%20a%20salty%20cheese,%20almost%20like%20a%20drizzle%20of%20honey%20but%20a%20more%20fun%20shape.%20I%20thought%20they%20would%20go%20well%20in%20a%20fizzy%20drink,%20like%20champagne,%20but%20their%20weight%20made%20them%20sink%20like%20a%20stone,%20so%20it's%20probably%20not%20worth%20putting%20them%20in%20a%20cocktail%20unless%20you%20have%20a%20straw%20to%20go%20with%20it,%20drinking%20your%20booze%20like%20bubble%20tea.%3C/p%3E%3Cp%3EPlaying%20with%20the%20Mister's%20balls.%20You%20knew%20I%20had%20to%20say%20it%20-%20Photos%20by%20Wasabi%20Prime%3C/p%3E%3Cp%3EIf%20you%20would%20like%20to%20make%20your%20own%20balls%20of%20drunken%20fury%20(not%20that%20furious,%20some%20of%20the%20alcohol%20has%20the%20potential%20to%20burn%20off%20in%20the%20process),%20here's%20the%20info%20I%20pulled%20from%20Brock's%20notes.%20Thank%20Mr.%20Wasabi%20kindly%20for%20sharing!%3C/p%3E%3Cp%3Especial%20tools%20needed:%20small%20glass%20eyedropper,%20tall%20clear%20drinking%20glass,%20metal%20sieve/strainer%20to%20drain%20and%20rinse%20finished%20spheres%3C/p%3E%3Cp%3EFirst%20thing%20-%20fill%20the%20tall%20drinking%20glass%20with%20the%20oil%20and%20put%20in%20the%20freezer;%20let%20it%20chill%20for%20a%20good%2020-30%20minutes.%20Needs%20to%20be%20super-cold%20to%20quickly%20chill%20the%20mixture%20as%20it's%20dropped%20in.%3C/p%3E%3Cp%3EOn%20the%20stove,%20combine%20the%20agar%20powder,%20water%20and%20sugar%20in%20a%20small%20pot%20and%20bring%20to%20a%20boil.%20If%20the%20liquid%20you're%20wanting%20to%20gel-up%20isn't%20alcoholic,%20you%20can%20add%20now.%20If%20you%20put%20the%20St.%20Germain%20in%20early,%20you'll%20burn%20off%20a%20lot%20of%20the%20alcohol%20in%20the%20boiling%20process.%20Let%20the%20water/agar/sugar%20boil%20for%20about%20two%20minutes.%20Take%20it%20off%20the%20stove%20and%20mix%20in%20your%20St.%20Germain%20in%20--%20it'll%20start%20to%20thicken%20quite%20a%20bit,%20so%20now%20comes%20the%20speedy%20part.%3C/p%3E%3Cp%3EHave%20your%20eyedropper%20at%20the%20ready%20and%20take%20your%20chilled%20oil%20from%20the%20freezer.%20Start%20dropping%20the%20warm%20mixture%20one%20droplet%20at%20a%20time%20into%20the%20oil.%20The%20cold%20from%20the%20oil%20and%20its%20viscosity%20will%20help%20form%20the%20sphere,%20plus%20the%20height%20of%20the%20glass%20will%20give%20it%20time%20to%20cool%20before%20sinking%20to%20the%20bottom.%20Just%20keep%20drop-drop-dropping%20until%20your%20hand%20cramps%20up%20and%20you%20just%20pour%20the%20remainder%20onto%20a%20Silpat%20and%20chop%20up%20into%20shards%20because%20you%20don't%20want%20to%20keep%20eyedropping%20all%20that%20liquid%20one%20at%20a%20time.%20Yes,%20we%20did%20this.%3C/p%3E%3Cp%3ENOTE:%20I%20asked%20Brock%20why%20he%20added%20the%20sugar%20--%20it's%20not%20just%20for%20additional%20flavoring,%20it's%20to%20help%20add%20weight%20to%20the%20mixture,%20so%20that%20it's%20heavier%20than%20the%20oil.%20He%20said%20if%20the%20mixture%20isn't%20heavier%20than%20the%20oil,%20it'll%20just%20spread%20out%20along%20the%20surface%20of%20the%20oil%20and%20make%20a%20slick%20on%20top.%3C/p%3E%3Cp%3EWhen%20you're%20done%20eyedropping%20your%20spheres,%20use%20the%20strainer%20to%20separate%20them%20from%20the%20oil%20and%20rinse%20gently%20with%20water.%20The%20residual%20oil%20should%20keep%20them%20from%20sticking.%20Can%20make%20a%20few%20days%20in%20advance,%20just%20keep%20them%20chilled,%20covered%20with%20plastic%20wrap%20in%20a%20bowl.%20It's%20basically%20little%20blobs%20of%20Jello,%20so%20they'll%20keep%20for%20a%20few%20days%20in%20the%20fridge.%3C/p%3E){kind=link}
