%20%20A%20friend%20and%20I%20biked%20half%20a%20day%20up%20the%20South%20mountain%20back%20home%20and%20enjoyed%20our%20picnic%20resting%20on%20a%20grassy%20knoll%20overlooking%20a%20church%20graveyard.%20%20%20The%20sun%20was%20hot.%20%20The%20drinks%20were%20refreshing%20and%20the%20sandwiches%20were%20every%20bit%20at%20delicious%20as%20delicious%20could%20be!%3C/p%3E%3Cp%3EAnother%20memorable%20picnic%20was%20one%20which%20I%20enjoyed%20after%20I%20had%20grown%20and%20had%20a%20family%20of%20my%20own.%20%20Rained%20out,%20we%20spread%20a%20blanket%20on%20the%20floor%20in%20the%20living%20room,%20where%20we%20enjoyed%20our%20sandwiches%20and%20treats%20%20and%20each%20others%20company%20as%20thunder%20cracked%20and%20lightening%20light%20up%20our%20big%20picture%20window.%20%20%20It's%20not%20so%20much%20the%20food%20you%20eat,%20or%20the%20location%20as%20it%20is%20the%20company%20that%20you%20keep!%20%20And%20of%20course%20the%20spirit%20which%20you%20bring%20to%20the%20occasion!%3C/p%3E%3Cp%3EI%20was%20recently%20sent%20a%20delightful%20picnic%20hamper%20from%20Unilever%20and%20challenged%20to%20come%20up%20with%20a%20new%20recipe%20for%20the%20upcoming%20National%20Picnic%20Week!%20%20You%20know%20I%20do%20love%20a%20challenge%20and%20I%20do%20love%20picnics%20so%20the%20hardest%20part%20for%20me%20was%20narrowing%20it%20down%20to%20one%20recipe!%3C/p%3E%3Cp%3ELet%20me%20say%20first%20of%20all%20the%20hamper%20was%20absolutely%20gorgeous.%20%20A%20lovely%20white%20wicker%20basket%20filled%20to%20the%20brim%20with%20an%20assortment%20of%20lever%20%20products%20.%20.%20.%20Hellman's%20mayonnaise's,%20Coleman's%20sauces,%20a%20variety%20of%20mustard's%20and%20every%20thing%20else%20you%20could%20need%20for%20a%20successful%20picnic%20.%20.%20.%3C/p%3E%3Cp%3E.%20.%20.%20%20a%20cooler%20bag%20to%20keep%20your%20salads%20cool,%20plates,%20salt%20and%20pepper%20shakers,%20forks,%20knives,%20spoons%20etc.%3C/p%3E%3Cp%3EIn%20short,%20everything%20that%20anyone%20could%20possibly%20need%20to%20take%20four%20hungry%20and%20adventurous%20people%20on%20a%20picnic!!%3C/p%3E%3Cp%3EI%20can%20tell%20you%20that%20we%20will%20sure%20be%20getting%20good%20use%20of%20this%20(I'm%20being%20optimistic%20here!%20%20We%20can't%20have%20three%20bummer%20summers%20in%20a%20row%20can%20we???%20%20%20I%20sure%20hope%20not!)%20%20We%20do%20love%20a%20good%20picnic%20here%20at%20Casa%20da%20Rayner!%3C/p%3E%3Cp%3EThe%20Toddster%20is%20a%20potato%20fiend!%20%20He%20just%20loves%20potatoes.%20%20I%20love%20them%20too.%20%20In%20this%20house%20it's%20not%20a%20perfect%20day%20unless%20some%20potatoes%20are%20involved%20and%20so%20I%20decided%20to%20create%20a%20delicious%20potato%20salad%20to%20take%20on%20our%20picnic%20and%20to%20help%20celebrate%20National%20Picnic%20week!%3C/p%3E%3Cp%3EI%20love%20potato%20salad.%20%20This%20is%20something%20which%20all%20too%20often%20is%20done%20very%20poorly%20though%20.%20.%20.%20over%20gloppy%20and%20cloying%20.%20.%20.%20%20stogged%20far%20too%20full%20of%20mayonnaise,%20with%20potatoes%20that%20are%20either%20under%20cooked%20and%20hard%20.%20.%20.%20or%20over%20cooked%20and%20falling%20apart.%3C/p%3E%3Cp%3EStore%20bought%20ready%20made%20potato%20salads%20are%20always%20%20a%20HUGE%20disappointment%20to%20me!%20%20Lacking%20in%20flavour,%20they%20just%20never%20quite%20reach%20the%20mark%20of%20what%20a%20good%20potato%20salad%20should%20and%20can%20be.%3C/p%3E%3Cp%3EMy%20salad%20has%20a%20lovely%20light%20dressing%20that%20is%20neither%20cloying%20or%20gloppy,%20flavoured%20lightly%20with%20a%20touch%20of%20horseradish,%20lemon%20and%20dill%20.%20.%20.%20sweet%20and%20oniony%20spring%20chives%20.%20.%20.%20the%20merest%20hint%20of%20mayonnaise%20.%20.%20.a%20dollop%20of%20extra%20virgin%20olive%20oil%20.%20.%20.%20the%20peppiness%20of%20mustard%20cress%20.%20.%20.%3C/p%3E%3Cp%3EAdd%20to%20that%20the%20delightful%20crunch%20and%20colour%20of%20spring%20beans%20and%20petit%20pois%20.%20.%20.%20crisp%20slices%20of%20red%20radishes%20.%20.%20.%3C/p%3E%3Cp%3EIn%20short%20the%20perfect%20picnic%20potato%20salad!%20%20I%20call%20it%20Better%20than%20Grandma's%20Potato%20Salad!%20%20Not%20because%20it's%20better,%20but%20because%20I'm%20cheeky!%20%20%20My%20gran%20made%20the%20best%20potato%20salad%20ever,%20and%20so%20did%20my%20mom.%20%20%20But%20this%20is%20good%20too,%20very%20.%20.%20.%20very%20good!%20%20Happy%20National%20Picnic%20Week!%3C/p%3E%3Cp%3E*Better%20Than%20Grandma's%20Potato%20Salad*%3C/p%3E%3Cp%3EServes%204%20to%205%3C/p%3E%3Cp%3EMuch%3C/p%3E%3Cp%3Ebetter%20for%20you%20than%20the%20mayonnaise%20laden%20potato%20salad%20of%20yore,%20yet%3C/p%3E%3Cp%3Estill%20every%20bit%20as%20tasty%20and%20healthier%20with%20the%20addition%20of%20lots%20of%3C/p%3E%3Cp%3Egreen%20vegetable%20crunch%20and%20snap!%3C/p%3E%3Cp%3Eduring%20the%20last%20five%20minutes.%20%20Drain%20well%20and%20then%20tip%20in%20to%20a%20large%3C/p%3E%3Cp%3Esalad%20bowl.%20Toss%20in%20the%20peas.%3C/p%3E%3Cp%3EWhisk%20t
