Ингредиенты

  • 6 Tbsp. sunflower oil
  • 4 lrg onions grated and squeezed to remove juice
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1/2 tsp turmeric pwdr
  • 1 tsp chilli pwdr
  • 1 tsp cumin pwdr
  • 1 tsp coriander pwdr
  • 1 tsp garam masala pwdr
  • 300 gm tomatoes minced
  • 1/2 tsp sugar
  • 6 Tbsp. double cream
  •     salt
  • 6 Tbsp. carrots diced
  • 4 Tbsp. peas
  • 6 Tbsp. potatoes peeled and diced
  • 6 Tbsp. French beans minced finely
  • 4 Tbsp. flaked almonds
  • 2 Tbsp. sultanas
  • 2 Tbsp. pistachio nuts minced
  • 2 tsp glace cherries minced
  • 2 Tbsp. walnuts minced roughly
  • 2 tsp coriander leaves minced

Инструкции

  1. Heat the oil and add in the onions.
  2. Fry till golden brown and add in the ginger and garlic pasta.
  3. Fry for a minute and add in all the pwdr spices.
  4. Stir well.
  5. Stir in the tomatoes and cook till they are pulpy.
  6. Add in the salt and sugar.
  7. Take off the heat and stir in the cream.
  8. In the meantime simmer all the vegetables till they are cooked but crisp.
  9. Add in the vegetables nuts and fruit to the sauce.
  10. Heat gently then serve with a sprinkling of coriander.
  11. This recipe is a superb north indian vegetable medley which is sinfully rich!
  12. Serves 4
