%20He's%20my%20one%20and%3C/p%3E%3Cp%3Eonly%20child%20(er,%20grown%20son)%20and%20it%20has%20taken%20me%20a%20few%20weeks%20to%20wrap%20my%3C/p%3E%3Cp%3Ehead%20around%20his%20being%20so%20far%20away,%20and%20that%20he%20really%20is%20on%20his%20own.%20%20It's%20bittersweet,%20but%20I'm%20truly%20happy%20for%20him.%3C/p%3E%3Cp%3EHe%20was%20also%20one%20of%20my%20best%20(and%20most%20honest)%20food%20critics,%20who%20would%20often%20bring%20along%20his%20best%20friend%20to%20join%20us%20at%20the%20dinner%20table.%20The%20night%20before%20my%20son%20drove%20off%20to%20his%20new%20chapter%20in%20his%20life,%20I%20asked%20him%20what%20he%20would%20like%20for%20his%20last%20supper.%20For%20dinner,%20he%20requested%20%22Osso%20Bucco%22,%20which%20I%20made%20for%20him.%20For%20dessert,%20he%20asked%20for%20his%20%231%20favorite%20dessert--%20cheesecake.%3C/p%3E%3Cp%3EI've%20posted%20a%20German%20Cheesecake%20made%20with%20Quark%20(and%20it's%20still%20one%20of%20my%20faves)%20in%202011.%20%20The%20most%20recent%20time%20I%20made%20cheesecake,%20it%20was%20in%20my%20pressure%20cooker.%20It%20only%20took%2015%20minutes,%20and%20turned%20out%20to%20be%20creamy%20and%20delicious.%20%20%20But,%20because%20this%20would%20be%20my%20son's%20last%20supper%20in%20his%20childhood%20home,%20I%20decided%20to%20bake%20a%20cheesecake%20in%20a%20more%20traditional%20way.%3C/p%3E%3Cp%3EBecause%20I'm%20such%20a%20huge%20fan%20of%20Cook's%20Illustrated,%20America's%20Test%20Kitchen%20and%20Cook's%20Country%20(all%20one%20in%20the%20same%20companies),%20I%20researched%20what%20cheesecake%20recipes%20they%20had%20developed.%20%20I've%20made%20cheesecakes%20in%20a%20water%20bath,%20which%20is%20hailed%20to%20be%20a%20way%20to%20avoid%20cracks%20on%20the%20cheesecake%20top.%20%20This%20recipe%20doesn't%20use%20a%20water%20bath.%20%20I%20trust%20ATK,%20however,%20so%20I%20rolled%20up%20my%20sleeves%20and%20got%20busy:%3C/p%3E%3Cp%3EThe%20crust%20is%20a%20traditional%20graham%20cracker%20crust,%20which%20is%20has%20three%20basic%20ingredients--%3C/p%3E%3Cp%3E...crushed%20graham%20crackers,%20sugar%20and%20melted%20butter.%3C/p%3E%3Cp%3EThe%20crust%20is%20pre-baked%20for%20about%2013%20minutes,%20and%20set%20on%20a%20wire%20rack%20to%20cool.%20The%20oven%20is%20now%20preheating%20to%20500%20degrees.%20Yes,%20that's%20right!%20500%20degrees.%3C/p%3E%3Cp%3EHold%20your%20gasp--%20this%20recipe%20uses%202-1/2%20pounds%20of%20cream%20cheese.%20That%20would%20be%20FIVE%208-ounce%20packages%20of%20cream%20cheese.%20Let's%20up%20the%20ante%20by%20adding%20six%20whole%20eggs,%20plus%202%20egg%20yolks,%20shall%20we?%20%20This%20is%20dessert,%20after%20all.%3C/p%3E%3Cp%3EOnce%20the%20cream%20cheese%20is%20blended%20with%20sugar,%20we%20add%20sour%20cream,%20fresh%20lemon%20juice%20and%20some%20pure%20vanilla.%3C/p%3E%3Cp%3ESo,%20here%20we%20go...%20let's%20fill%20'er%20up%20.%3C/p%3E%3Cp%3EThat's%20a%20lot%20of%20cheesecake%20filling!%20%20I%20placed%20the%20spring%20form%20pan%20a%20baking%20sheet,%20just%20in%20case%20there%20were%20any%20spillovers.%20%20After%20then%20minutes,%20I%20reduced%20the%20oven%20temperature%20to%20200F,%20without%20opening%20the%20door.%3C/p%3E%3Cp%3EThe%20cheesecake%20should%20bake%20for%20about%201-1/2%20hours,%20or%20until%20the%20internal%20temperature%20reaches%20150%20degrees.%20%20Look%20at%20how%20pretty%20that%20cheesecake%20rose!%3C/p%3E%3Cp%3EI%20was%20really%20pleased%20at%20the%20beautiful%20brown%20on%20the%20cheesecake,%20and%20there%20were%20no%20cracks!%20Yay!%3C/p%3E%3Cp%3ESo,%20now,%20the%20wait%20begins.%20The%20cake%20needs%20to%20cool,%20on%20a%20wire%20rack,%20for%20about%202-1/2%20to%203%20hours.%20No%20cheating!%20Then,%20the%20cheesecake%20is%20covered%20with%20plastic%20wrap%20and%20chilled%20for%20at%20least%202%20more%20hours%20(or%20up%20to%204%20days).%3C/p%3E%3Cp%3ETo%20remove%20the%20cheesecake,%20I%20released%20the%20spring%20form%20pan%20and%20loosed%20it%20up%20by%20running%20a%20metal%20spatula%20all%20around.%3C/p%3E%3Cp%3EMy%20son%20prefers%20a%20cherry%20pie%20filling%20on%20top,%20but%20this%20time%20I%20suggested%20a%20fresh%20strawberry%20topping.%20%20He%20was%20all%20for%20it.%20%20(This%20optional%20topping%20also%20comes%20from%20America's%20Test%20Kitchen.)%3C/p%3E%3Cp%3ENotes%20from%20America's%20Test%20Kitchen:%3C/p%3E%3Cp%3EThe%20flavor%20and%20texture%20of%20the%20cheesecake%20is%20best%20if%20the%20cake%20is%20allowed%3C/p%3E%3Cp%3Eto%20stand%20at%20room%20temperature%20for%2030%20minutes%20before%20serving.%20When%3C/p%3E%3Cp%3Etowel%20after%20each%20cut%20helps%20make%20neat%20slices.%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20I%20placed%20the%20first%20slice%20in%20front%20of%20my%20son.%20As%20I%20gazed%20at%20my%20son's%20facial%20expression,%20he%20closed%20his%20eyes%20and%20he%20smiled.%20%20Yes,%20%22this%20was%20the%20best%20cheesecake%20he's%20ever%20eaten%22,%20he%20declared.%20%20Of%20course,%20he%20might%20be%20just%20a%20tad%20bit%20biased,%20but%20I'll%20take%20that%20as%20a%20sincere%20compliment.%20%20I%20have%20to%20agree.%3C/p%3E%3Cp%3EThe%20flavor%20of%20the%20cheesecake%20was%20creamy%20and%20had%20the%20perfect%20balance%20of%20tang%20(from%20the%20lemon%20juice%20and%20sour%20cream)%20and%20just%20the%20right%20notes%20of%20vanilla.%20%20My%20husband,%20who%20thinks%20that%20cheesecake%20is%20%22just%20okay%22%20went%20back%20for%20more.%20%20I%20sent%20half%20of%20the%20cheesecake%20home%20with%20my%20son's%20best%20friend.%20%20In%20the%20morning,%20I%20knew%20my%20son%20would%20be%20driving%20off--%20into%20the%20sunrise.%20%20The%20last%20thing%20I%20need%20is%20to%20be%20left%20alone%20with%20that%20much%20cheesecake.%3C/p%3E%3Cp%3EHonestly,%20I%20didn't%20think%20this%20was%20a%20complicated%20recipe%20to%20make,%20but%20it's%20got%20a%20hefty%20price%20tag%20when%20you%20have%20to%20buy%20five%20packages%20of%20Philadelphia%20Cream%20Cheese%20(my%20favorite%20brand).%20%20But,%20when%20this%20is%20for%20the%20son%20you%20love%20and%20adore,%20it's%20totally%20worth%20it.%3C/p%3E%3Cp%3EAs%20a%20side%20note,%20I%20have%20adjusted%20to%20my%20son's%20new%20chapter%20in%20his%20life.%20He%20sounds%20very%20upbeat,%20and%20is%20loving%20learning%20his%20new%20trade.%20%20Craig%20and%20I%20have%20already%20purchased%20our%20airline%20tickets%20to%20fly%20to%20Central%20Texas%20to%20spend%20a%20week%20exploring%20his%20new%20state.%20%20Seven%20weeks%20to%20go!%3C/p%3E){kind=link}
