%3C/p%3E%3Cp%3EWhen%20it%20came%20to%20the%20menu%20we%20largely%20stuck%20to%20the%20edict%20of%20not%20serving%20brand%20new%20recipes,%20sticking%20with%20tried%20and%20true%20staples%20like%20hummus,%20lamb%20meatballs,%20and%20my%20crostini%20with%20mozzarella%20di%20bufula%20and%20serrano%20ham,%20but%20I%20admittedly%20did%20try%20something%20that%20was%20sort%20of%20new%20by%20trying%20Tom%20Colicchio%E2%80%99s%20recipe%20for%20cured%20salmon.%20It%E2%80%99s%20not%20the%20first%20time%20I%E2%80%99ve%20made%20gravlax,%20nor%20was%20this%20the%20first%20time%20we%E2%80%99ve%20tried%20making%20a%20cured%20product%20following%20a%20Tom%20Colicchio%20recipe,%20so%20it%20didn%E2%80%99t%20feel%20quite%20as%20much%20of%20a%20risk%20as,%20say,%20test-driving%20a%20recipe%20from%20either%20the%20Le%20Bernadin%20cookbook%20or%20even%20the%20Gramercy%20Tavern%20cookbook.%3C/p%3E%3Cp%3EMost%20of%20our%20spread,%20save%20for%20the%20hummus,%20crudite,%20veggie%20chips%20and%20pistachios.%3C/p%3E%3Cp%3EAll%20that%20aside,%20we%20had%20the%20added%20temptation%20to%20make%20it%20because%20the%20fish%20stand%20in%20the%20Cross%20Street%20market%20regularly%20carries%20sushi-grade%20Scottish%20salmon%20for%20a%20reasonable%20price,%20so%20this%20felt%20like%20the%20perfect%20recipe%20to%20use%20with%20salmon%20that%20fresh%20and%20gorgeous.%3C/p%3E%3Cp%3EEven%20better,%20I%20think,%20is%20that%20this%20is%20a%20recipe%20that%20fits%20in%20as%20part%20of%20a%20holiday%20spread%20but%20also%20easily%20can%20be%20worked%20into%20a%20regimen%20of%20lighter%20fare.%20To%20be%20completely%20frank%20I%20was%20inspired%20by%20Bon%20Appetit%E2%80%99s%20breakfast%20salad%20of%20smoked%20salmon,%20cream%20cheese,%20mescalun%20greens,%20red%20onion,%20and%20Wasa%20crackers%20to%20make%20this%20little%20appetizer%E2%80%94merely%20omitting%20the%20greens%20to%20make%20it%20a%20little%20easier%20to%20eat%E2%80%94to%20make%20the%20dish%20one%20that%20would%20encourage%20seconds%20and%20thirds%20but%20not%20stuff%20ourselves%20too%20much%20that%20we%20wouldn%E2%80%99t%20have%20room%20to%20eat%20anything%20else.%3C/p%3E%3Cp%3EGravlax%20with%20cream%20cheese%20on%20Wasa%20cracker.%3C/p%3E%3Cp%3EThis%20was%20the%20correct%20decision,%20as%20we%20ate%20nearly%20everything%20we%20had%20set%20out%20over%20the%20course%20of%20the%20evening%20and%20the%20only%20item%20that%20never%20ended%20up%20being%20made%20were%20chicken%20wings,%20which%20we%20made%20for%20ourselves%20the%20next%20day%20to%20go%20with%20pizza.%3C/p%3E%3Cp%3EHappy%202015,%20friends%E2%80%94here%E2%80%99s%20to%20a%20great%20year%20full%20of%20good%20eating.%3C/p%3E%3Cp%3ECured%20Salmon%20(gravlax)%3C/p%3E%3Cp%3EAdapted%20from%20Think%20Like%20A%20Chef%20by%20Tom%20Coliichio%3C/p%3E%3Cp%3EMix%20sugar%20and%20salt%20together%20with%20the%20herbs,%20then%20fold%20in%20the%20citrus%20zest.%20Place%20a%20large%20piece%20of%20plastic%20wrap%20on%20a%20plate,%20and%20place%20half%20of%20the%20salt/sugar/herb%20mixture%20on%20the%20plastic.%20Place%20the%20salmon%20skin-side%20down%20onto%20the%20mixture,%20and%20then%20carefully%20cover%20the%20fish%20with%20the%20rest%20of%20it%20Wrap%20tightly%20(I%20used%20a%20few%20extra%20pieces%20to%20get%20it%20good%20and%20tight)%20and%20let%20sit%20in%20the%20fridge%20for%20about%2036%20hours.%3C/p%3E%3Cp%3EAbout%20an%20hour%20prior%20to%20service,%20unwrap%20the%20fish%20and%20take%20it%20out%20of%20the%20cure,%20blotting%20it%20dry%20with%20a%20paper%20towel%20and%20removing%20as%20much%20of%20the%20mixture%20as%20possible.%20Let%20sit%20in%20the%20fridge%20for%20another%20hour,%20and%20then%20slice%20into%20very%20thin%20slices%20with%20a%20very%20sharp%20knife%20to%20serve.%20We%20used%20cream%20cheese,%20some%20shallots%20pickled%20in%20red%20wine%20vinegar%20with%20a%20little%20salt,%20and%20Wasa%20crackers.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
