  • 2 Tbsp. Extra virgin olive oil
  • 1 pkt (6 ounce) Uncle Ben's White & Wild Rice
  • 1 3/4 c. Water
  • 1 cube Butter
  • 1 x Onion, minced
  • 1 x Green Bell Pepper, minced
  • 2 stalk Celery, minced
  • 2 x Green Onions, minced
  • 5 med Zucchinis, minced
  • 3 med Tomatoes, minced
  • 12 x Mushrooms, sliced
  • 1 x Clove Garlic, chopped
  • 1 sm Pkg Sliced Almonds
  •     The Seasoning Mix from the Rice pkg
  •     Seasoned Salt
  •     Garlic Pwdr or possibly Salt
  •     Onion Pwdr or possibly Salt
  •     Sweet Basil
  •     Oregano
  •     Italian Seasoning

  1. (A) In 2 Tbsp Extra virgin olive oil saute/fry' Uncle Ben's White & Wild Rice till tender.
  2. Add in Water, cover and Simmer for 25 min.* Don't add in Rice Seasoning mix at this time*
  3. (B) In another pan, saute/fry' (in 1 cube Butter): Onion, Green Bell Pepper, Celery, Green Onions, Zucchinis, Tomatoes, Mushrooms, Garlic, and Almonds.
  4. (C) Add in the remaining according to taste.
  5. (D) Mix into the Rice. Add in 1/2 of this mix into a baking dish, add in a few slices of Monterey Jack Cheese. Add in remainder of mix, and completely cover with Monterey Jack Cheese. Bake, uncovered, for 30 min in a pre-heated375 degree oven.
