.%20The%20dosas%20in%20the%20Mysore/Bangalore%20area%20are%20different%20from%20other%20parts%20of%20South%20India.%20In%20other%20regions,%20they%20are%20usually%20very%20thin%20and%20crunchy.%20The%20dosas%20we%20make%20are%20crispy%20and%20brown/red%20on%20the%20outside%20with%20a%20bit%20of%20a%20%22meat%22/sponginess%20on%20the%20inside,%20to%20bite%20on.%20We%20do%20not%20use%20chutney%20powder%20as%20a%20spread%20inside%20a%20thin,%20whitish%20dosa,%20contrary%20to%20what%20restaurants%20in%20other%20regions/countries%20sell%20as%20Mysore%20Masala%20Dosa%20(though%20the%20chutney%20powder%20is%20not%20a%20bad%20option%20at%20all!%20)%20A%20thick,%20red,%20garlic-red%20chilli%20chutney%20is%20smeared%20inside%20the%20dosa%20before%20the%20masala%20(potato%20bhaji)%20is%20filled.%20A%20small%20pat%20of%20butter%20atop%20the%20bhaji%20and%20the%20dosa%20gets%20folded,%20ready%20to%20be%20served%20with%20coconut%20chutney.%3C/p%3E%3Cp%3EThat%20said,%20not%20all%20restaurants%20in%20the%20Mysore/Bangalore%20region%20make%20dosas%20this%20way%20i.e%20crispy%20on%20the%20outside%20yet%20spongy%20on%20the%20inside,%20not%20to%20forget%20tasty%20too.%20So%20my%20biggest%20grouse%20when%20I%20moved%20to%20a%20%22newer%22%20part%20of%20town%20was%20the%20lack%20of%20a%20good%20dosa%20restaurant%20in%20the%20vicinity.%20But%20I%20was%20quite%20happy%20to%20make%20the%20trek%20to%20the%20older%20parts%20of%20town%20to%20the%20restaurants%20that%20I%20knew%20made%20killer%20dosas,%20braving%20the%20awful%20traffic%20of%20Bangalore.%20After%20being%20deprived%20of%20the%20pleasure%20of%20having%20a%20good%20dosa%20when%20the%20mood%20hit,%20for%20over%20a%20decade%20of%20my%20life%20(don't%20even%20get%20me%20started%20on%20the%20dosas%20here!),%20it%20wasn't%20hard%20to%20take%20that%20trek%20across%20town.%20It%20is%20all%20a%20matter%20of%20perspective,%20right?%20Plus%20I'm%20always%20willing%20to%20travel%20for%20good%20food!%20:)%20So%20anyway,%20coming%20back%20to%20the%20restaurants,%20each%20of%20these%20old-time-favorites%20and%20good-dosa-making%20newer%20restaurants%20have%20their%20own%20secret%20recipe%20for%20their%20dosa%20batter.%20Each%20is%20different%20and%20they%20all%20taste%20good%20in%20their%20own%20unique%20way.%20The%20masalas%20and%20the%20chutneys%20are%20all%20different%20too.%20%20And%20with%20a%20nice%20cup%20of%20filter%20coffee....ooh%20la%20la!%3C/p%3E%3Cp%3EMy%20Mom%20and%20sister%20both%20make%20amazing%20dosas%20at%20home.%20The%20addition%20of%20methi%20and%20the%20proportion%20all%20make%20for%20a%20delicious%20dosa,%20that%20can%20be%20eaten%20even%20without%20accompaniments.%20The%203+1%20proportions%20in%20the%20batter%20below%20come%20from%20my%20Mom.%20%20For%20masala%20dosa,%20she%20actually%20seasons%20the%20oil+ghee%20combo%20with%20fried%20onion,%20that%20really%20takes%20this%20over%20the%20edge!%20Each%20bite%20is%20a%20small%20bit%20of%20heaven.%20My%20sister%20does%20not%20use%20idli%20rice,%20just%20the%20raw%20rice%20and%20that%20comes%20out%20just%20great%20too.%20The%20trick%20is%20in%20getting%20the%20batter%20right%20and%20infusing%20the%20dosa%20with%20a%20good%20amount%20of%20fat%20to%20get%20the%20crispness%20and%20the%20right%20taste.%3C/p%3E%3Cp%3EFor%20the%20dosa%20batter:%3C/p%3E%3Cp%3ELightly%20saut%C3%A9%20green%20chillies%20and%20coriander%20in%20a%20bit%20of%20warm%20oil,%20just%20to%20release%20the%20flavors.%20Cool%20and%20grind%20with%20the%20remaining%20%22to%20grind%22%20ingredients%20until%20smooth,%20adding%20a%20little%20water.%20Make%20the%20tadka%20and%20add%20on%20top.%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EHeat%20a%20lightly%20greased%20griddle/tawa%20until%20very%20hot.%20Sprinkle%20a%20little%20water%20on%20the%20tawa%20(do%20this%20for%20every%20dosa.%20Helps%20cook%20more%20evenly%20and%20less%20prone%20to%20dosa%20sticking%20to%20the%20tawa).%20When%20the%20water%20evaporates,%20pour%20a%20ladleful%20of%20batter%20in%20the%20center%20of%20the%20tawa%20and%20spread%20it%20in%20a%20circular%20motion,%20to%20form%20a%20round%20dosa.%20Do%20not%20spread%20it%20paper%20thin.%20Remember%20the%20Mysore%20style%20of%20dosa%20does%20need%20a%20little%20sponginess%20on%20the%20inside,%20while%20being%20crisp%20out.%3C/p%3E%3Cp%3EPour%20about%20a%20tbsp%20of%20oil+ghee%20around%20the%20dosa.%20You%20do%20need%20a%20bit%20more%20fat%20for%20a%20good%20masala%20dosa.%20Don't%20skimp%20on%20this,%20if%20you%20can%20help%20it.%3C/p%3E%3Cp%3ECover%20and%20cook%20on%20medium-high%20until%20browned%20and%20crispy%20around%20the%20edges.%3C/p%3E%3Cp%3EDo%20not%20turn%20over%20to%20cook%20the%20other%20side.%20Simply%20spread%20a%20bit%20of%20the%20red%20chutney%20around%20the%20center%20until%20about%20%20an%20inch%20or%20so%20around%20the%20edges.%3C/p%3E%3Cp%3EPlace%20some%20palya%20a%20little%20off%20center%20and%20put%20a%20small%20pat%20of%20butter%20(optional%20but%20highly%20recommended),%20before%20folding%20the%20dosa.%3C/p%3E%3Cp%3EPlace%20on%20a%20plate%20to%20serve,%20along%20with%20some%20coconut%20chutney%20on%20the%20side.%3C/p%3E%3Cp%3EGo%20ahead,%20indulge!%3C/p%3E%3Cp%3ENote:%20This%20batter%20cannot%20be%20used%20for%20making%20idlies.%20This%20is%20purely%20a%20dosa%20batter.%3C/p%3E%3Cp%3EDo%20not%20make%20the%20batter%20watery.%20It%20should%20be%20slightly%20thick%20to%20get%20the%20sponginess.%3C/p%3E){kind=link}
