%20but%20has%20the%20wonderful%20flavor%20&%20texture%20of%20a%20scratch%20cake.%20When%20I%20read%20the%20reviews%20from%20folks%20who%20had%20made%20this%20recipe%20(on%20allrecipes.com),%20some%20commented%20that%20it%20tasted%20artificial,%20or%20like%20a%20store%20bought%20cake,%20or%20like%20a%20cake%20mix.%20I%20happen%20to%20like%20the%20taste%20of%20some%20cake%20mixes%20and%20I%20certainly%20like%20the%20tenderness%20of%20cake%20mix%20cakes%20so%20I%20did%20not%20have%20a%20problem%20with%20the%20flavor%20of%20this%20cake.%20If%20you%20are%20thinking%20that%20you%20will%20save%20time%20making%20this,%20you%20would%20be%20wrong.%20It%20takes%20just%20as%20much%20time%20as%20making%20a%20scratch%20cake.%20I%20made%20a%20double%20recipe,%20therefore%20I%20had%20to%20separate%208%20eggs%20and%20it%20has%20a%20lot%20of%20other%20ingredients%20that%20the%20back%20of%20the%20box%20doesn't%20include.%20A%20double%20recipe%20makes%20a%20perfect%20four%209%20inch%20layers.%20I%20did%20not%20want%20such%20a%20strong%20almond%20flavor%20so%20I%20used%20a%20lot%20less%20almond%20&%20doubled%20the%20vanilla.%20I%20bet%20it%20would%20have%20been%20wonderful%20if%20I%20would%20have%20used%20a%20vanilla%20bean%20or%20two%20in%20the%20batter.%20But%20the%20end%20result%20of%20this%20cake%20it%20a%20perfectly%20moist,%20tender,%20not%20too%20dense,%20fine%20crumbed%20&%20flavorful%20perfectly%20white%20cake.%20I%20was%20sure%20to%20use%20only%20egg%20whites%20(but%20a%20little%20bit%20of%20one%20egg%20yolk%20slipped%20into%20the%20batter)%20and%20I%20made%20sure%20to%20use%20CLEAR%20vanilla%20extract.%20I%20wanted%20a%20WHITE%20cake%20-%20not%20OFF%20white.%20I%20used%20cake%20strips%20around%20each%20of%20my%209%20inch%20pans%20and%20I%20placed%20the%20pans%20on%20a%203/4%20baking%20sheet.%20I%20wanted%20to%20prevent%20overbrowning%20and%20to%20ensure%20even%20baking.%20You%20know%20how%20sometimes%20cake%20mix%20cakes%20are%20kind%20of%20fragile%20because%20they%20are%20a%20little%20to%20tender%20&%20fluffy?%20I%20think%20it's%20the%20added%20sour%20cream%20that%20adds%20some%20sturdiness%20to%20these%20layers%20because%20they%20were%20easy%20to%20handle%20and%20to%20ice.%20Also,%20I%20was%20careful%20to%20get%20cake%20mixes%20that%20did%20NOT%20have%20the%20added%20pudding%20in%20the%20mix.%20Some%20reviews%20stated%20that%20the%20extra%20pudding%20made%20the%20cake%20almost%20too%20moist,%20somewhat%20sticky.%20I%20used%20Duncan%20Hines%20White.%20I'm%20telling%20you,%20this%20is%20my%20idea%20of%20a%20delicious%20and%20perfect%20white%20cake!!%20You%20just%20need%20to%20get%20over%20the%20fact%20that%20it's%20not%20totally%20from%20sratch.%20I%20highly%20recommend%20it.%3C/p%3E%3Cp%3EWhite%20Almond%20Wedding%20Cake%3C/p%3E%3Cp%3Eallrecipes.com%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20325%20degrees%20F%20(165%20degrees%20C).%20Grease%20and%20flour%20an%2011x13%20inch%20cake%20pan.%3C/p%3E%3Cp%3E2.%3C/p%3E%3Cp%3EStir%20together%20the%20white%20cake%20mix,%20flour,%20sugar,%20and%20salt%20in%20a%20large%20bowl%20until%20well%20mixed.%20Pour%20in%20the%20water,%20sour%20cream,%20vegetable%20oil,%20almond%20and%20vanilla%20extracts,%20and%20egg%20whites,%20and%20beat%20with%20an%20electric%20mix%20on%20low%20until%20all%20the%20ingredients%20are%20mixed%20and%20moistened%20but%20some%20lumps%20still%20remain,%204%20minutes.%3C/p%3E%3Cp%3E3.%3C/p%3E%3Cp%3EPour%20the%20batter%20into%20the%20prepared%20cake%20pan,%20and%20bake%20in%20the%20preheated%20oven%20until%20the%20top%20is%20a%20light%20golden%20brown%20and%20a%20toothpick%20inserted%20into%20the%20center%20of%20the%20cake%20comes%20out%20clean,%20about%2025%20minutes.%20Allow%20to%20cool%20before%20frosting.%3C/p%3E){kind=link}

Baked this cake for the family, topped with peanut butter buttercream icing...oh my goodness! This is the best white cake that I have ever tasted, my family had the same opinion. They have asked for this one again as a layer cake with filling. I made it in a 9 x 13 pan as I didn't have an 11 x 13. The cake is dense, moist...delicious. I used two teaspoons of vanilla instead of the almond, but plan to make it with the almond flavor and use a maraschino cherry buttercream...yum!!
