%20had%20to%20be%20generous%20-%20be%20it%20the%20mustard%20seeds%20or%20the%20udad%20dal%20or%20the%20quantity%20of%20oil%20used,%20she%20hated%20when%20people%20skimped%20on%20these%20things%20in%20the%20tempering%20of%20a%20dish.%20Two,%20she%20loved%20asafoetida%20(heeng)%20and%20her%20cooking%20was%20always%20redolent%20of%20this%20spice.%20So%20much%20so,%20that%20I%20would%20tease%20her%20as%20'perungaayam%20paati'%20(asafoetida%20granny,%20in%20Tamil),%20especially%20when%20she%20used%20chunks%20of%20asafoetida%20and%20a%20tiny%20intact%20piece,%20which%20wasn't%20dissolved%20properly%20would%20find%20its%20way%20into%20my%20mouth%20while%20eating%20sambar-rice.%20Her%20other%20love%20was%20gingelly%20oil%20(nallennai)%20which%20she%20used%20liberally%20in%20her%20dishes%20and%20even%20tiffin%20items%20like%20upma.%3C/p%3E%3Cp%3EI%20used%20to%20hate%20asafoetida,%20mustard%20seeds%20and%20gingelly%20oil%20as%20a%20kid,%20and%20true%20to%20my%20genes,%20I%20have%20duly%20fallen%20in%20love%20with%20all%20three%20of%20them%20today.%20I%20use%20the%20strongest%20possible%20asafoetida%20to%20spike%20my%20tambrahm%20dishes%20and%20its%20effect%20can%20only%20be%20experienced,%20not%20explained.%3C/p%3E%3Cp%3EShe%20spent%20nearly%2050%20years%20of%20her%20life%20in%20Matunga%20(a%20locality%20in%20heart%20of%20Mumbai%20that%20came%20up%20in%201930s-40s%20with%20a%20large%20number%20of%20Tamil%20brahmin%20families)%20from%201940-1989%20before%20they%20moved%20to%20Mulund%20to%20be%20closer%20to%20my%20grandparents.%20My%20uncle%20had%20a%20joke%20about%20her%20that%20instead%20of%20learning%20Hindi,%20she%20ended%20up%20teaching%20Tamil%20names%20of%20all%20the%20vegetables%20to%20the%20bhaaji%20wala%20bhaiyyaas%20(vegetable%20vendors)%20from%20UP%20in%20the%20Matunga%20veggie%20market.%3C/p%3E%3Cp%3EKayamma%20is%20thrilled%20to%20see%20her%20great-great-grand%20child%3C/p%3E%3Cp%3EShe%20passed%20away%20at%20the%20ripe%20old%20age%20of%2092%20in%20the%20year%202009.%20She%20had%20the%20good%20fortune%20to%20see%20two%20great-great%20grandchildren%20in%20her%20lifetime.%20This%20is%20one%20of%20my%20most%20favourite%20dishes%20she%20used%20to%20make%20and%20each%20time%20I%20make%20this%20in%20my%20kitchen,%20it%20is%20with%20many%20fond%20remembrances%20of%20her.%3C/p%3E%3Cp%3ERecipe%20for%20Tamarind%20poha%20/%20beaten%20rice%20/%20Puli%20Aval%3C/p%3E%3Cp%3EServes%202-3%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EWash%20poha/aval/beaten%20rice%20well%20in%20running%20water,%20drain%20all%20the%20water%20and%20cover%20and%20keep%20aside.%3C/p%3E%3Cp%3EHeat%20oil%20and%20add%20ingredients%20-mustard%20seeds%20through%20red%20chillies%20and%20saute%20till%20peanuts%20and%20dal%20turn%20golden%20brown.%3C/p%3E%3Cp%3EAdd%20tamarind%20extract%20and%20bring%20to%20a%20boil.%3C/p%3E%3Cp%3EAdd%20salt%20and%20turmeric%20powder%20to%20this.%3C/p%3E%3Cp%3EOnce%20this%20dissolves,%20add%20the%20rehydrated%20poha,%20sambar%20powder,%20coconut%20and%20stir%20gently%20to%20bring%20all%20the%20ingredients%20together.%3C/p%3E%3Cp%3ECheck%20for%20salt%20and%20spice.%20Adjust%20with%20some%20extra%20salt%20and%20sambar%20powder%20if%20required.%3C/p%3E%3Cp%3EGarnish%20with%20some%20fresh%20coconut%20before%20serving%20and%20eat%20hot.%3C/p%3E%3Cp%3E*to%20make%20tamarind%20extract,%20wash%20a%20small%20fistful%20of%20tamarind%20(or%20a%20compact%20lemon%20size)%20and%20soak%20it%20in%20a%20cup%20of%20hot%20water%20for%2015%20minutes.%20After%20it%20has%20softened,%20rub%20it%20well%20between%20thumb%20and%20fingers%20to%20extract%20all%20the%20essence.%20Remove%20the%20leftover%20rind%20etc%20and%20squeeze%20it%20dry%20and%20discard.%20If%20required%20filter%20the%20extract%20to%20remove%20any%20fibers.%3C/p%3E%3Cp%3EYou%20can%20even%20prepare%20this%20with%20red%20rice%20poha%20if%20you%20wish.%20The%20soaking%20time%20will%20be%20considerably%20increased%20and%20instead%20of%20draining%20all%20the%20water%20after%20washing,%20soak%20it%20in%20some%20water%20instead,%20so%20that%20it%20softens%20well.%3C/p%3E){kind=link}
