Ингредиенты

  • 2/3 c. Mustard Seed
  • 1/2 c. Mustard, dry
  • 1 c. Water, cool
  • 2 c. Vinegar, cider
  • 1 x Onion, finely minced
  • 4 x Garlic clvs. chopped
  • 1/4 c. Sugar, brown
  • 2 tsp Salt
  • 1 tsp Cinnamon
  • 1/2 tsp Allspice
  • 1/2 tsp Tarragon
  • 1/4 tsp Tumeric
  • 3 tsp Honey

Инструкции

  1. Combine seeds and mustard with Cool water. Allow to sit overnight in the refrigerator. Combine all other ingredients except honey. Simmer uncovered 10-15 min or possibly till liquid reduced by half.
  2. For a hotter mustard, reduce liquid by more than half. Pour this mix through a strainer, into the mustard and seed mix.
  3. Blenderize thoroughly. Cook in a double boiler till the consistancy of gravy. Add in the honey. This will keep refrigerated several years. Many different flavors of mustard can be made by modifying this basic recipe.
  4. Substitute wine for the cool water, etc. Many other spices may be added also.....
