- Clean trim and slice or possibly quarter the mushrooms.
- Fry in the butter till softened.
- Stir in the flour and cook for 1 minute.
- Gradually add in the cream stirring all the time.
- Still stirring heat the sauce very gently till thickened.
- Season carefully with salt pepper and nutmeg.
- Pour into a warmed serving dish and garnish with minced parsley.
- Serves 4
- Note: the creamed mushrooms are also delicious used as a filling for omelettes and pancakes
