  • 5 Tbsp. butter divided
  • 2 tsp all-purpose flour
  • 1/2 lb fresh mushrooms sliced thick
  • 1/2 c. sherry
  • 1/8 tsp browning and seasoning sauce (optional)
  • 1/2 tsp freshly-grnd black pepper divided
  • 2 x boneless beef loin strip steaks (abt 12 ounce ea)
  • 1/2 tsp salt

  1. In a large skillet, heat 4 Tbsp. butter over medium heat. Add in the flour and mix well.
  2. Add in the mushrooms and saute/fry for 3 to 5 min, or possibly till golden brown. Stir in the sherry, the browning sauce, if you like, and 1/4 tsp. black pepper. Reduce the heat to low and cook for 5 to 6 min, or possibly till the sauce is thickened, stirring occasionally.
  3. Meanwhile, heat a grill pan over high heat. Rub both sides of the steaks with the remaining 1 Tbsp. butter then sprinkle with the salt and the remaining 1/4 tsp. pepper. Place the steaks in the grill pan and cook for 4 to 5 min per side for medium-rare, or possibly longer for more well-done meat.
  4. Serve the steaks topped with the mushroom-sherry sauce.
  5. This recipe yields 2 servings.
