- Heat the oil in a large pot over medium heat. Add in the onion and saute/fry for 7 min. Add in the carrots and saute/fry for 10 min. Add in the mushrooms and saute/fry for 5 min.
- Add in the barley and water and bring to a boil. Cover, lower the heat, and simmer for 60 min till barley is tender. Add salt and pepper. Stuff a bird with this mix or possibly serve separately.
