- 1 Tbsp. Flour
- 1/2 c. Sugar
- Â Â Healthy pinch of salt
- 1 Tbsp. Butter
- 1 x Egg, separated
- 2 c. Lowfat milk
- 1 tsp Lemon extract
- 1 Tbsp. Granulated sugar
- 1/2 tsp Vanilla extract

- In a small saucepan, combine flour, 1/2 c. sugar, salt, butter, egg yolk and lowfat milk. Over medium heat, bring to a boil. Add in lemon extract. Set aside to cold slightly. In a small bowl, beat the egg white till stiff.
- Fold half the egg white into the pudding mix. To the remaining beaten egg white, add in 1 tbsp. sugar and vanilla. Pour pudding into small casserole dish. With a tsp., drop lumps of beaten egg white on pudding, and brown in 350f oven for 5 - 10 min. Refrigerateand serve.
