- 1/4 c. bacon grease
- 1 lb sliced okra
- 1/4 c. butter
- 1/2 c. flour
- 1 lrg onion minced
- 1 x green bell pepper minced
- 2 x celery ribs minced
- 7 c. warm water
- Â Â Cubed breast meat from 5 moorhens
- 1 lb smoked sausage cut bite size
- 1 bn green onions minced
- 1 x garlic clove chopped
- 1 x bay leaf
- 1/4 tsp thyme
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
- Â Â Worcestershire sauce to taste
- Â Â Tabasco sauce to taste

- Cook okra in 2 Tbsp. bacon grease and set aside.
- Make a roux by heating the remaining bacon grease and the butter in a large Dutch oven; stir in the flour. Cook over medium heat, stirring constantly, till roux is light brown. Add in onion, bell pepper and celery, and cook till onion is clear.
- Add in three c. warm water, moorhen meat, sausage, okra, green onions, garlic, bay leaf, thyme, salt and pepper. Cook over low heat 2 hrs.
- Add in four more c. warm water, and Worcestershire sauce and Tabasco to taste. Cook over low heat 2 hrs.
- Add in four more c. warm water, and Worcestershire sauce and Tabasco to taste. Cook over low heat 2 more hrs. Serve over cooked rice.
