- 1 c. Brown Sugar, packed
- 1 c. M&Ms
- 1/2 c. Crisco Shortening
- 3 eggs (or equivalent egg substitute)
- 2 t. Baking Soda
- 1.5 t. Vanilla Extract
- 1 t. Salt

%20%20I%20think%20Eileen's%20Cookies%20has%20my%20very%20favorite%20Monster%20Cookies...so%20I%20tried%20to%20replicate%20those.%20%20At%20first%20I%20googled%20to%20see%20if%20someone%20had%20a%20recipe%20like%20Eileen's...but%20no%20one%20seemed%20to.%20%20So,%20I%20made%20my%20own!%20%20:)%20%20They%20turned%20out%20really%20well%20too!!%20%20Yum.%3C/p%3E%3Cp%3EOh,%20while%20looking%20up%20about%20Monster%20Cookies,%20I%20learned%20a%20couple%20of%20things.%20%20Like%20they%20don't%20have%20flour%20in%20them%20and%20they%20need%20chocolate%20and%20it's%20all%20wrapped%20up%20in%20a%20peanut%20butter%20cookie.%20%20I%20had%20known%20there%20was%20oatmeal,%20peanut%20butter%20and%20M&Ms%20in%20them....I%20just%20didn't%20know%20they%20were%20a%20flour-less%20cookie.%20%20Cool%20huh?%3C/p%3E%3Cp%3EMonster%20Cookies%3C/p%3E%3Cp%3E1.%20%20Combine%20the%20sugar,%20brown%20sugar%20and%20shortening.%3C/p%3E%3Cp%3E2.%20%20Once%20the%20sugars%20and%20shortening%20are%20combined,%20add%20salt,%20baking%20soda,%20vanilla%20and%20eggs.%20%20Mix%20until%20combined.%3C/p%3E%3Cp%3E3.%20%20Now%20add%20the%20peanut%20butter%20and%20again%20mix%20until%20combined.%20%20It%20will%20get%20thicker,%20and%20quite%20silky%20smooth.%20%20Like%20below.%3C/p%3E%3Cp%3E4.%20%20Add%20the%20oats%20in%20one%20cup%20at%20a%20time,%20mixing%20between%20in%20additional%20cup.%20%20(See%20pics%20below)%20%20Depending%20where%20you%20live%20you%20may%20use%20anywhere%20between%204%20and%205%20cups%20of%20oats.%20%20I%20used%205%20c.%20of%20oats%20and%20live%20in%20North%20Carolina.%3C/p%3E%3Cp%3E5.%20%20After%20the%20dough%20is%20the%20right%20consistency%20for%20cookies,%20carefully%20add%20in%20the%20M&Ms.%20%20I%20incorporated%20them%20with%20the%20mixer%20but%20used%20the%20very%20lowest%20speed%20which%20is%20called%20%22Stir%22%20and%20just%20let%20it%20go%20around%20a%20couple%20of%20times.%20(see%20pics)%3C/p%3E%3Cp%3E6.%20%20Now%20you%20are%20ready%20to%20bake%20these%20little%20goodies!%20%20I%20use%20a%20teaspoon%20cookie%20scoop%20like%20so...but%20you%20can%20just%20drop%20by%20the%20spoonful%20or%20use%20a%20large%20scoop!%20%20:)%20%20Just%20leave%203%20inches%20or%20so%20inbetween%20each%20unbaked%20cookie%20on%20the%20sheet.%3C/p%3E%3Cp%3E7.%20%20Bake%20these%20cookies%20at%20350degrees%20for%207-11%20minutes%20or%20until%20golden%20brown.%20%20(Don't%20let%20them%20get%20too%20brown,%20because%20you%20want%20the%20middles%20to%20be%20slightly%20chewy%20and%20definitely%20delicious!%20%20:)%3C/p%3E%3Cp%3EThis%20batch%20made%20about%206.5%20dozen%20cookies!%20%20:)%3C/p%3E%3Cp%3EEnjoy!%20%20Oh,%20and%20these%20did%20turn%20out%20to%20taste%20just%20about%20like%20Eileen's%20Monster%20Cookies%20too!!!%20%20Woohooo!!!%20Yum!%20%20:)%3C/p%3E%3Cp%3EPin%20It%3C/p%3E){kind=link}
