  • 2 x Egg
  • 2 c. Flour
  • 1 1/2 c. Skim lowfat milk
  • 2 Tbsp. Packed brown sugar, or possibly granulated
  • 4 Tbsp. Vegetable oil
  • 3 tsp Baking pwdr
  • 3/4 tsp Baking soda
  • 1 1/2 tsp Cream of tartar
  • 1/2 tsp Salt
  •     Vegetable oil for cooking

  1. Beat Large eggs with hand beater in large bowl till fluffy. Beat in remaining ingredients except vegetable oil for cooking, till smooth (beat by hand).
  2. For thinner pancakes, stir in additional 1 - 2 Tbsp. lowfat milk. Heat griddle or possibly skillet over medium heat or possibly to 375. Grease griddle with oil if necessary. Pour batter onto warm griddle. Cook pancakes till puffed and dry around edges. Turn and cook other side till golden.
  3. NOTES : The original recipe calls for 6 tsp. of baking pwdr. All I had was 3 tsp. of pwdr so made the substitution of baking soda and cream of tartar for the remaining three tsp.. It produces a very airy batter and cooks really fluffy pancakes.
