Mojo Criollo

Mojo (pronounced mo-ho, not mo-joe) is a classic Cuban seasoning sauce that is a wonderful marinade for meat, fish, poultry, and vegetables. A mojo is made of garlic, herbs, olive oil, and citrus, and there is no end to the variations. No Cuban meal would be complete without mojo. Here is my take on this delicious marinade/rub. SPECIAL NOTE: The citrus fruit of choice is Naranja Agria, or sour orange. You can find the bottled juice or even the fruit at specialty latin markets, (you can substitute the naranja agria juice with 2 parts lemon juice to 1 part orange juice).

Ингредиенты

  • 10-12 garlic cloves- approximately 1 bulb
  • teaspoon dried oregano (Mexican oregano works better than Italian)
  • 1 teaspoon cumin
  • 3/4 cup Naranja Agria or (substitute 2 parts lemon to 1 part orange juice)
  • 1/4 cup olive oil
  • 1 cup parsley chopped fine
  • salt & pepper to taste (I prefer kosher or sea salt for enhanced flavor)

Инструкции

  1. Add garlic, parsley, oregano, cumin, and salt & pepper to food processor, pulse well to a pesto like consistency.
  2. Pour into mixing bowl and add juice and olive oil, mix well. Cover and refrigerate, till you are ready to use
  3. Please use a non metal bowl, so that you don't get any reaction from the orange juice
  4. Keeps up to one week in the fridge
  5. Shake/mix well before using to combine all the ingredients
