- Refrigeratethe water and the egg.
- Whisk together all the batter ingredients just before dipping the food.
- The batter should only just be amalgamated so which a few small lumps of flour are still apparent.
- Get a pan of oil warm.
- If you are organised sufficient to have a kitchen thermometer the oil should register about 190 degrees C/375 degrees F.
- Dip the vegetables into the batter then into the warm oil.
- Cook them till golden brown turning from Ume to time with a fork.
- They will probably bob back up again but keep trying.
- Cook them for a couple of min on each side.
- Drain on kitchen paper and eat straight away with the lemon wedges.
- Serves 2
