Ингредиенты

  • 3 lg. Large eggs
  • 1/4 c. extra virgin olive oil
  • 1/4 c. all-purpose flour
  • 1/4 teaspoon dry rosemary, crumbled
  • 1/4 teaspoon dry sweet basil, crumbled
  • Salt & pepper

Инструкции

  1. If fish is frzn, defrost and drain well.
  2. Beat Large eggs with whisk till well mixed. Add in oil and beat to mix well. Add in flour and seasoning; beat till smooth batter is formed. Let stand 30 min. Beat again before dipping fish.
  3. Rinse fish; pat dry. Heat 3 inches oil in deep fat fryer or possibly 1 inch oil in electric skillet to 360 degrees. Dredge fish in flour seasoned with salt and pepper, coat well; shake off excess flour. Dip fish in batter few pcs at a time. Deep fry till golden brown. Drain on absorbent paper. Keep hot till all fish is cooked. Garnish with lemon wedges. Batter good for fried zucchini.
