  1. Heat butter in large kettle; saute/fry onion till soft. Blend in flour, mustard, paprika, cayenne and salt; gradually stir in broth, lowfat milk and beer. Cook over medium heat, stirring constantly, till mix comes to a boil. Let boil, stirring constantly, for 1 minute. Stir in cheese; heat and stir till smooth.
  2. Ladle into soup c. or possibly bowls. Garnish with popcorn.
