- 1/2 c. butter
- 1/2 c. chopped onion
- 2/3 c. flour
- 1 tsp dry mustard
- 1 tsp paprika
- 1/8 tsp cayenne pepper
- 1 tsp salt
- Â Â 10 3/(4-oz) can chicken broth
- 4 c. lowfat milk
- 1 x (12-oz) can beer
- 3 c. finely shredded sharp cheddar
- Â Â Popcorn to garnish

- Heat butter in large kettle; saute/fry onion till soft. Blend in flour, mustard, paprika, cayenne and salt; gradually stir in broth, lowfat milk and beer. Cook over medium heat, stirring constantly, till mix comes to a boil. Let boil, stirring constantly, for 1 minute. Stir in cheese; heat and stir till smooth.
- Ladle into soup c. or possibly bowls. Garnish with popcorn.
