.%20%20Michigan:%20Surrounded%20by%20lakes%20and%20home%20of%20many%20wonderful%20people%20and%20smiling%20faces.%20%20Did%20you%20also%20know%20that%20it%20makes%20one%20cute%20cookie?%3C/p%3E%3Cp%3EI%20first%20got%20the%20idea%20to%20send%20%22Michigan%22%20care%20packages%20off%20to%20%22Michigan%22%20people%20scattered%20across%20the%20country%20a%20few%20weeks%20ago.%20%20Lucky%20me,%20I%20got%20a%20set%20of%20Michigan%20cookie%20cutters%20for%20graduation.%20%20Of%20course%20there%20would%20have%20to%20be%20some%20Maize%20and%20Blue%20in%20the%20package,%20some%20sort%20of%20baked%20good%20(what%20can%20I%20say,%20I%20spoil%20my%20friends!)%20and%20a%20letter.%20%20Side%20note:%20have%20I%20mentioned%20HOW%20many%20letters%20I've%20been%20writing%20this%20summer?%20%20I%20love%20it!%20%20And%20I%20love%20getting%20actual%20mail!%3C/p%3E%3Cp%3ENow%20back%20to%20your%20regularly%20scheduled%20program...%20%20I%20decided%20to%20combine%20two%20into%20one%20-%20Michigan%20shaped%20cookies%20in%20Michigan%20colors!%20%20I'm%20a%20genius,%20you%20don't%20need%20to%20tell%20me.%20%20I%20sent%20four%20packages%20out%20(flat%20rate%20shipping%20boxes%20are%20amazing%20for%20this%20sort%20of%20thing):%20to%20Zenka%20in%20San%20Diego,%20Bjoern%20in%20Houston,%20Jake%20T%20in%20Washington%20DC%20and%20one%20to%20two%20LV's,%20Sam%20and%20Alex,%20hiking%20the%20Pacific%20Crest%20Trail%20in%20California%20(or%20that's%20where%20they%20were%20when%20they%20got%20the%20package).%20%20Sadly,%20according%20to%20Bjoern,%20his%20package%20never%20got%20to%20him,%20so%20I%20wrote%20him%20a%20nice%20long%20letter%20tonight%20instead.%20%20And%20if%20you're%20reading%20this%20Bjoern,%20I'm%20sending%20out%20more%20baked%20goods%20next%20week.%20%20This%20time%20you%20WILL%20get%20it.%3C/p%3E%3Cp%3EThis%20is%20my%20all-time%20favorite%20sugar%20cookie%20recipe.%20%20The%20almond%20and%20lemon%20are%20perfectly%20balanced%20and%20the%20cookie%20is%20fluffy%20but%20still%20holds%20its%20shape%20when%20baked.%20%20Is%20there%20anything%20else%20you%20could%20ask%20for?%20%20Word%20to%20the%20wise,%20don't%20try%20to%20start%20piping%20royal%20icing%20at%20midnight.%20%20I%20didn't%20go%20to%20bed%20until%202%20am%20and%20still%20had%20to%20remake%20blue%20royal%20icing%20and%20re-pipe%20all%20the%20cookies%20the%20next%20morning%20(the%20icing%20wasn't%20high%20enough%20for%20flooding).%3C/p%3E%3Cp%3EThank%20you%20to%20all%20my%20friends%20and%20family%20who%20made%20my%20experience%20at%20the%20University%20of%20Michigan%20such%20a%20wonderful%20one%20and%20even%20if%20you%20didn't%20get%20a%20care%20package,%20know%20I%20would%20have%20sent%20you%20one%20if%20I%20had%20the%20money%20to%20do%20so!%3C/p%3E%3Cp%3ESugar%20Cookies%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%20degrees.%3C/p%3E%3Cp%3ECream%20butter%20and%20sugars%20in%20a%20mixer%20for%205%20minutes.%20Add%20eggs%20one%20at%20a%20time,%20mixing%20thoroughly.%20Add%20vanilla,%20almond,%20and%20lemon%20zest.%3C/p%3E%3Cp%3ESift%20in%20flour,%20baking%20powder,%20and%20salt%20a%20little%20at%20a%20time.%20Do%20not%20over%20mix,%20this%20process%20should%20take%20about%20one%20minute.%3C/p%3E%3Cp%3EChill%20dough%20for%2030%20minutes%20in%20fridge.%20After%20chilled,%20divide%20the%20dough%20into%20two%20balls%20and%20roll%20out%20each%20one%20between%20two%20pieces%20of%20parchment%20paper.%20%20Once%20dough%20is%20at%20about%20a%20%E2%85%93%20of%20an%20inch%20thickness,%20freeze%20the%20sheets%20of%20dough%20for%20about%2020%20minutes.%20Remove%20from%20freezer%20and%20cut%20out%20shapes.%20%20Re-roll%20dough%20and%20re-freeze.%20%20Repeat.%20%20Line%20a%20cookie%20sheet%20with%20parchment%20paper%20and%20bake%20cookies%20for%207-8%20minutes.%20Wait%20until%20cookies%20are%20cooled%20before%20icing.%3C/p%3E%3Cp%3ERoyal%20Icing:%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E1%20egg%20white%3C/p%3E%3Cp%3E1%20&%205/8%20cups%20of%20powdered%20sugar%3C/p%3E%3Cp%3Ea%20few%20splashes%20of%20lemon%20juice%3C/p%3E%3Cp%3Efood%20coloring%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EBeat%20together%20egg%20white%20and%20powdered%20sugar%20with%20a%20hand%20mixer%20until%20stiff%20peaks%20form%20and%20the%20icing%20is%20shiny.%3C/p%3E%3Cp%3EAdd%20in%20lemon%20juice%20and%20continue%20beating.%20%20Beat%20in%20food%20coloring.%3C/p%3E%3Cp%3EEither%20pipe%20icing%20or%20spread%20on%20cookies.%3C/p%3E){kind=link}
