- based on Lemon Pound Cake from The Gourmet Cookbook (the yellow one)
- 2 c. all-purpose flour
- 1 t. baking powder
- 1/4 t. fine sea salt
- 1/8 c. Meyer lemon zest
- 1 c. coconut oil (in solid form)
- 2 c. sugar
- 6 farm fresh eggs
- 1 1/2 t. pure vanilla extract
- 1/4 c. milk
- 1/4 c. fresh Meyer lemon juice

%3C/p%3E%3Cp%3ENow%20that%20I%20had%20taken%20care%20of%20my%20near-delinquent%20lemons,%20I%20needed%20some%20more%20recipes.%20%20%20Taking%20a%20break%20from%20smoothies,%20I%20made%20another%20dessert.%20%20%20What%20else%20could%20I%20do?%3C/p%3E%3Cp%3EI%20tried%20making%20another%20lemon%20cake%20with%20much%20better%20results%20this%20time.%20%20%20I%20did%20not%20have%20a%20fallen%20mess%20but%20I%20did%20have%20two%20beautiful%20and%20delicious%20loaf%20cakes%20as%20the%20result.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20325%20degrees%20F.%20%20Spray%20the%20ends%20of%20two%20loaf%20pans%20with%20cooking%20spray.%20%20%20Cut%20two%20strips%20of%20parchment%20paper,%20wide%20enough%20to%20cover%20the%20bottom%20of%20the%20pan%20and%20long%20enough%20to%20hang%20over%20the%20sides.%20%20%20Line%20the%20bottom%20of%20the%20pans%20with%20the%20paper%20leaving%20enough%20on%20the%20sides%20so%20that%20the%20finished%20cake%20can%20be%20easily%20lifted%20out.%20%20%20(Basically,%20the%20long%20sides%20and%20the%20bottom%20of%20your%20pan%20will%20be%20covered%20with%20parchment%20paper%20while%20the%20ends%20are%20sprayed%20with%20cooking%20spray.)%3C/p%3E%3Cp%3EIn%20a%20medium%20mixing%20bowl,%20whisk%20together%20flour,%20baking%20powder,%20salt%20and%20zest.%20%20%20%20Set%20aside.%3C/p%3E%3Cp%3EUsing%20an%20electric%20mixer,%20beat%20together%20coconut%20oil,%20and%20sugar%20until%20fluffy,%201-2%20minutes.%20%20Add%20eggs%20one%20at%20a%20time%20and%20beat%20well%20after%20each%20addition.%20%20Beat%20in%20vanilla.%20%20%20Place%20mixer%20speed%20on%20low.%20%20%20In%20three%20alternating%20batches,%20add%20flour%20first%20then%20milk%20and%20lemon%20juice%20start%20and%20end%20with%20the%20flour%20additions.%20%20%20Beat%20until%20just%20combined.%3C/p%3E%3Cp%3EDivide%20batter%20and%20spoon%20into%20the%20two%20lined%20loaf%20pans.%20%20%20Bake%20until%20cake%20is%20golden%20brown%20and%20a%20cake%20tester%20comes%20out%20clean%20about%2045-55%20minutes.%20%20%20Cool%20cakes%20in%20pans.%3C/p%3E%3Cp%3EOptional%20Lemon%20Drizzle%20for%20one%20cake:%20%20%20Stir%20together%201/3%20cup%20fresh%20lemon%20juice%20with%20about%201/4%20cup%20sugar.%20%20(You%20can%20adjust%20for%20your%20own%20sweetness%20level.)%20%20%20Stir%20will%20until%20sugar%20is%20dissolved.%20%20%20When%20cake%20is%20removed%20from%20oven,%20poke%20holes%20in%20the%20top%20of%20cake%20with%20a%20wooden%20skewer.%20%20%20Pour%20drizzle%20over%20warm%20cake%20and%20let%20cool.%20%20%20Lift%20out%20cooled%20cake%20and%20slice%20and%20serve.%20%20%20This%20makes%20a%20pretty%20moist%20cake%20super%20moist.%3C/p%3E%3Cp%3ENo%20fallen%20ooey-gooey%20mess%20this%20time,%20thank%20goodness.%20%20%20This%20time%20we%20had%20two%20beautiful%20cakes,%20one%20with%20this%20decadent%20lemon%20drizzle%20and%20one%20without.%20%20This%20cake%20freezes%20beautifully%20so%20one%20went%20straight%20into%20the%20freezer%20for%20later.%3C/p%3E%3Cp%3EThis%20is%20a%20cross%20section%20of%20the%20%E2%80%9Cdrizzled%E2%80%9D%20cake.%3C/p%3E%3Cp%3EI%20love%20my%20Gourmet%20cookbook.%20%20%20I%20adapted%20the%20recipe%20just%20a%20bit%20by%20replacing%20the%20butter%20with%20coconut%20oil%20and%20decreasing%20the%20amount%20of%20zest%20from%201/4%20cup%20to%201/8.%20%20%20I%20also%20used%20a%20lemon%20drizzle%20instead%20of%20the%20called-for%20glaze%20in%20the%20original%20recipe.%20%20%20The%20coconut%20oil%20just%20gives%20a%20hint%20of%20flavor%20that%20compliments%20the%20Meyer%20lemons.%3C/p%3E%3Cp%3EPlease%20keep%20sending%20good%20thoughts%20to%20my%20lemon%20tree%20which%20really%20may%20have%20bitten%20it%20in%20the%20cold%20weather.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
